So I know this video is a little different with no voice over. I just wanted to try it out, and see if I liked it or not. But, definitely let me know what you think! RECIPE CREDIT:
I used the recipe from cook book "Molly on the range" by Molly Yeh
Ingredients:
Cake:
1 & 1/2 c- Pistachios (unsalted, roasted)
1 tsp- Salt (kosher)
1/2 c- Flour
1/2 c- Almond flour (ground almonds)
2 sticks- Butter (unsalted, room temp)
1 & 1/2 c- Sugar
4- Eggs
1- Lemon (zest of half of the lemon)
1/2 tsp- Almond extract
Glaze:
1 TBSP- Lemon juice
1/2 c- Powdered sugar
Directions:
Using a food processor, pulse pistachios till fine crumbs. Don't over pulse otherwise you will get nut butter.
Measure out 1&1/2 cups of the crumbs and set aside. The leftovers after that will be for garnish at the end.
In a large bowl, mix together the salt, flour, almond flour, and the 1&1/2 cups of pistachios crumbs.
Using a stand mixture, cream the butter and sugar till light and fluffy. about 5 min or so.
Add eggs one at a time. Mixing well between each egg.
-Add lemon zest, and almond extract.
On low speed, add the dry mixture.
Using a 9 X 4 loaf pan, that has been prepped with baking spray and parchment paper pour batter into pan.
Bake at 350 F for at least 45 min, or till its cooked all the way through
While that is baking, and cooling make the glaze.
Add the lemon juice to the powdered sugar, and whisk till combined.
Once your cake is COMPLETELY cooled, drizzle with the glaze, and top with the remaining pistachio crumbs.
