There are not many things better in life that camping, getting a fire going, some bbqing, some beers and chatting while kicking back and relaxing. I absolutely NEED that gadget you made to lower the coal basket into the barrel! I've gone through several pairs of gloves so far. I suck at pouring a chimney of lit charcoal down and hitting my target. PBJunior.
I used some 1/4” round stock and just bent it up myself. If you have a local welding & fan shop I’m sure someone could make one up for you, especially if they have a bender.
Hey Adam next time you cook on your PBC try putting just 2 or 3 handfuls of hot coals in your basket with it almost full of unlit coals. It will cook a lot slower for you and the chunk wood will last a little longer if need be. Just what I learned from cookin on mine.
This is very timely. Watching you cook is relaxing and entertaining too. A great pass time. I am inspired. I will try your recipe this weekend. I have a strip of ribs in the freezer. Going to have to attempt it with my own rub seeing I don't have the official secret rub you mention.

I wonder if you cook'd those ribs extra low and slow for a longer time if the bone and hanger would pull loose allowing the rick of ribs to drop into the coals? Interesting smoker idea although maybe they should have a removable screen above the coal pan to prevent a complete loss of food/ribs. Good look'n ribs Adam.
My buddy showed me how to use a spoon to remove the membrane. At the moment it's not doing me much good, as I'm in my friend's restaurant where they only bbq shoulders. Oh well. Delicious
Do you have to add charcoal during cooking? I got my husband this smoker for Christmas and he tried to smoke a Turkey. The charcoal burned out WAY before the turkey was done. He added more but after 4 hours we brought the turkey indoors and finished it in the oven. I don’t think I’ve seen you add more charcoal during cooking on any of the PBJ videos so I’m curious. Thank you in advance.

What was the total cook time for the ribs and cook time for the sausage? I just can’t get my ribs right on my pbj. I also have the rack to do sausage now and haven’t had a chance to use it yet
