In this video Im using my Pit Boss Lexington 500 and some pecan pellets to make the perfect spatchcock chicken. Cooking a whole chicken has never been so easy and the spatchcock technique ensures even cooking on the entire chicken. To take this whole chicken over the top I'm adding a savory bbq sauce that will be a perfect pair with the smokey flavor. Smoked Spatchcock recipe and smoking directions
Heat pellet grill or smoker to 225 degrees. Smoke Whole Chicken @225° until internal temp reach 130° at hour number two base the chicken every 30 Minutes with your favorite BBQ sauce. Once Chicken hits 130° internally raise pellet grill temp to 300° and smoke until it reaches an internal temp of 165°.
Ingredients
The Usual All Purpose Seasoning and your favorite BBQ rub
Avocado oil
Mop Sauce
1 Cup BBQ Sauce
1tsp Black pepper
1Tsp Red Pepper Flakes
1/4 Cup Apple Cider Vinegar
@ Hour #2 apply Mop Sauce every 30 Minutes until chicken reaches 130°

I always brine my chicken for a day or two before I cook it on the Lexington. It guarantees a juicy chicken when you're done. Low and slow for hours then kicked up high at the end for a nice crisp/caramelized skin.

Brining does give you a nice juicy chicken! And going low n slow initially gives you more smoke flavor! Awesome fam!!

Well done Sir! Malcom Reed is usually my go to guy, but couldn't really fined anything that popped for whole chickens with his vids. Glad I found yours. Can't wait to fire up my Pit Boss in a few minutes and trying it out.

Man, that was really good and informative! Your finished chicken looks amazing! I brought home a whole chicken from the grocery store this morning and started looking for a different way to cook it than I normally do. Beautiful. Love how you season the whole chicken even the parts we don't see and reminded folks that the cook is more important than the look. Using avocado oil is new one. Might have to pick up a bottle.

Thank you so much! Yes safety is the top priority! I wasn’t sold on avocado oil until I used it in one of my air fryer recipes I really like the performance over Olive oil.

This one took about 4.5-5hrs. I normally don't like to give times because the elements play a huge factor in smoking. So it could be longer or shorter. I normally shoot for temp or tenderness.

I still recomend it! Its a entry level smoker to get in the game. Perfect for someone learning how to smoke and trying to figure out if smoking is for them. Not a really big investment, but its worth it. I have made some amazing things on this smoker and I still have mine and it runs like a champ.

I recently got an offset smoker which is work tendimg the fire. I'm glad i kept this in my arsenal especially on the longer smokes I dont have to tend to the fire just have to tend to the food. The trade off is a less pronounce smoke flavor but makes the process easier.

@CookingwithManualFocus thx bro... I'm very interested in this smoker. I thought it was just a cheap brand sold at Walmart until I seen multiple different yt reviews on this brand. I've recently seen guys in Houston using them for bbq competitions. You don't have many videos on it, but I like the fact that you've had it for 2 years, and have high praise about it. I'll be leaning on you for help in the near future so I can get in the game!
