Do we need to sneeze half way through the process??🤣🤣 I follow your instructions to the letter and I have had perfect success making your pizza recipe with the poolish, now I want to try the BigA. My wife got me a Ninja pizza oven for Christmas and I couldn't eat anything for about 6 months as I had a stomach tumor making it impossible to eat. After some treatments and a little time I was finally able to eat most foods and one of the first was making your pizza. Absolutely the best pizza I have ever eaten, I have been looking for years for a good pizza dough recipe. THANK YOU so very much for sharing the "secrets" with all of us, I recommend your channel to everyone looking to make pizza at home. 😁 👍 just a side note if anyone is wondering, It takes about 2.5 minutes at 700F to cook a pizza in the Ninja oven.

Ahhhhh! Oh my God what a crust! That is the most original and impressive pizza I have ever seen! My favorite will always be Margherita. My grandmother never cooked ham. She was taught to cook, sew & knit while living with the nuns as a child in Turi. I don't know why she was never taught how to cook with ham or use pork products? Very impressed! good job Vito! happy to see you reached the gold RU-vid level! Bravo!

Please explain the 75% hydration(900g +600g with 2kg of flour) and the 14g of yeast (7g before fermentation and 7g after). Both seem very high

Yeast seems fine, 0.7%. That's normal. But 75% hydration seems incredibly high.

This reminds me of a recipe my Polish grandfather would make.. leftover mashed potato, bone marrow, and mustard on toast.. or pork fat instead of bone marrow.

Regarding the BIGA, I think you had a video like this a few years back and I tried it then. At that time I found it difficult to integrate the Biga with the remaining ingredients without a good mixer and the mixer had to work at it. The resulting pizza had a bit more chew than the Poolish-made dough, but the Biga seemed to be lacking flavor compared to the Poolish. I will have to try it again and see if my opinion changes.

Looks like pizza will also have plastic particles from the dough scraping while mixing in the plastic tray. Scary but truth. I love you and your work lots for sure.

In one of my recent comments I mentioned that I incorporate almost all of the flour into the poolish. I really like this Biga idea and I need to check it out a little deeper and give it a try. Also, I liked this voiceless video with the only words being "Soft and Crounchee" LOL! Nice work Vito!

With biga i always got the problem that little chunks of biga stay in the dough. Like there is little hard chunks after everything is mixed up, is that normal? I use a doughmachine.

I tried this but the next day I put the biga in my stand mixer and added the water; the dough looks like it is too wet. I am using 00 flour but I am not sure why it’s coming out like this. The water was very hard to mix into the dough

You can hear that tiny amounts of plastic are scraped off the box with the metal spatula which end up in the dough. Yummy.

Wrong biga/poolish. You always use much more water and thus less flour for making poolish.
