Whether you're a fan of sweet and savory, spicy and savory, or crave the comforting embrace of a calzone, Chef Keith has got you covered. With his expert tips and tricks, you'll learn how to achieve the perfect balance of flavors and textures every time.
Recipe:
1000 g bread flour
700 g water
20g fine sea salt
1 packet dry instant yeast / or 10g fresh yeast
40 g olive oil
1 T honey
Put wet ingredients- water, oil, honey, in mixer bowl
-then add dry ingredients-and mix with dough hook for 6/8 minutes until dough is cohesive . Take out , put in bowl to rise covered with plastic wrap or a couche for one hour before dividing.
Important note- if using fresh yeast first crumble it up into the flour with fingertips to make sure it's not staying in one lump .
