Pizza Omelet
Ingredients
• 4 eggs
• 1 medium yellow or white onion, chopped
• 1 green pepper, sliced
• 1 cup of chopped cremini mushrooms
• 2 tablespoons of olive oil ( or more as needed)
• salt and pepper to taste
Directions
• Preheat your oven to 350 degrees F
• Sauté the onions and olive oil in a large frying pan for a minute, then add mushrooms and green peppers and sauté them on a medium heat for 5 minutes.
• Turn the heat to low and pour the eggs over the mushroom mixture.
• Transfer the frying pan into the oven and bake for 8 minutes or until the top of the pizza is browned.
