I went vegan 1-1/2 years ago and lost 75 pounds, came off of diabetes meds and blood pressure meds because I no longer need them. The food is delicious and I feel better at 54 than I did in my 30's. There's a lot of great RU-vid channels with recipes and tips to eat whole foods. Great video Carolyn. Thanks for sharing!

First comment ever, subed about 2 weeks ago. Saw the tofu and daiya cheese and thought she's vegan. Didn't know in till this video. I'm 53 and am living in a rv as well. I bought mine for 2000.00 and did a redo on it. My 12 year old son and I moved from our home due to a very bad domestic life with my husband. We don't travel because he's in school buy I hope to someday. Watching Bob on his rv life channel gave me the hope and courage to leave the bad situation I had been stuck in for 38 years. Saw you on his channel and subed to your channel. Also I'm vegan as well....😀

Karen, it matters that you showed your son that resolve to leave. My mother (rest her soul) did the same when we were very young and I always respected her for it, among other things. Chin up, shoulders back, onwards. 💥💥👊

Carolyn, Love your video. You mentioned trying to get away from snacking, instead of chips, I use thin cucumber slices for dips and other spreads like hummus. I'm not Vegan, but I try to get a couple vegetarian meals a week, a Flexitarian. One thing I do is chop up peppers, onions, garlic and saute a batch. I keep it in the fridge and it's ready to add to stir-fries, soups or combined with just about anything and lasts for days.

Yummy! I do oats for breakfast but without sugar. I make baggies up every week with 1/2 tst cinnamon (adds a sort of sweetness that helps), 1tsp chia seeds (more protein and texture), 1 tsp sunflower seeds, 1 tsp flax (healthy fats) & half a cup of slow cook organic oats. After dumping that into my bowl I add chopped fruit, fresh or frozen & pour over about half a cup of super hot almond milk but I'm told that you can use water. By the time I get a spoon and pour my coffee, it's ready. Yum. In summer I make it with cold milk the night before and let it sit in the fridge over night for a cold muesli. You gave me some good ideas too. Thanks for that - I'll be looking for those crackers. Hey - want a simple pizza? Use corn tortillas for the crust, a smear of tomato or spaghetti sauce and veggies, sprinkle with a wee bit of cheese and toast on high. 2 6" tortillas make a perfect supper for me and I clean out my veggie drawer too. I use veggie broth for soup but also love mushroom broth but have to watch brands - some have loads of added sugar. If I want it a bit sweet, carrots, sweet taters or squash do the job nicely. Great video - I look forward to your cooking ones. Sharing ideas is a fun way to broaden our recipe file.

Cannot cook flax and chia, heat kills the bonds, which is why we eat the seeds! Store in cold, not exposed to heat at all

I'm a Nutritarian. WFPB. No salt, sugar or oil!!! I agree about the honey and I would die for some Birks! Cooking for me is so easy too. Love that I met another Plant food person! Gonna see who else is wfpb here. Thank you for this vid. :) Tofu fingers are too good. I marinate with aminos or low soy and a drop of liquid smoke and roll in nootch. Bake

Thank you for this video! I just changed over to vegetarian eating because of health purposes as well as the whole, "my food had a face", I've been eating this way now for about 6 weeks. I'm excited that you are going to do cooking videos as well. I will also be transitioning to the "nomad" lifestyle the end of this year hopefully, if not the first of next year. Safe travels!

We started saying plant based instead of vegan, it usually cuts out criticism from those who want vegan to mean specific, political things. Have been off the wagon but I am ready to jump back in! Thanks!

I'm Heather using my husband's RU-vid account, aged 64 & first quit eating meat at age 8. I've been an "imperfect" vegetarian, increasingly veganish ever since. I think anything we can do to exploit animals less & consciously care for our health more, is a good thing. Politicized vegans get on my nerves. Fanaticism doesn't help raise awareness.

Went vegan two months ago due to some medical issues in addition to being gluten and soy free. Loving it so far and it has definitely helped my migraines and inflammation from Stage IV Endometriosis. I, too, am an imperfect vegan. Everyone always says you have to press your tofu, but I don't...well, not much. I kinda press it a little, and then marinate it in chicken-flavored boullion (better than boullion...no chicken flavor), then cut it up & put it in a bowl....then sprinkle corn starch & bread crumbs + spices (poultry seasoning, garlic, smoked paprika, etc), then bake until crispy. These little squares can be added to chinese food, or pasta, or just dip them in a sauce, or added to salad, etc...even my picky kids like them.

I love veggies also ♥️especially broccoli, I find kale too bitter for my taste. Unfortunately I don’t like tomatoes, it’s a texture thing for me. But I love raw spinach a lunch place in my town makes a bts, bacon, very thin sliced tomato and spinach dribbled with a creamy balsamic on a Hawaiian roll. They slice the tomato extra thin for me since they know I don’t really like them very much.

When you put heat to any good healthy oil it changes the molecular structure of the oil from poly and or mono unsaturated fat to a saturated fat. Poly and mono unsaturated fats are meant to be used in the raw state such as on salads or drizzled on the top of cooked foods after they are removed from the pan, drizzled on breads or other foods so that you get and retained the benefits of the oil. That goes for cold pressed Olive oil as well. This is a well researched subject and I hope you can used this info to help you. This is also true for nuts and seeds if you toast them in a pan over heat or in the oven.

THANK YOU for this very informative video. I eat to live, I do not live to eat. All is want is a simple easy to make meal that keeps me alive and reasonably healthy. This is the best video I have seen so far and I have not found a cookbook I like.

Avocado oil is great for cooking and frying. It has a much higher smoke point than olive oil and has a milder flavor as well.

Avocado oil is very good for you. It has multiple benefits and is very versatile, you can use it for any oil in a recipe, even baking.

Just checked out Avocado oil (I was afraid they would have to do some bad industrial processing to "harden" the oil, making it more suitable for high temps. But no, it is fine. Thanks for the tip.

I have been a vegan for years and I like flavor. I cook fresh like you and I have learned over the years what is good and what is not. I make a cheese sauce you can use for cheese toast or on potatoes or over beans and chips..good for you choosing healthy.

Thank you so much for clearing up the protein cry. Yes, I think the meat and dairy industries may have something to do with it. My breakfast is a sandwich with multi grain/seed/nut bread with peanut butter, pea pods and raw rainbow chard. Get creative! Since going vegan I have discovered a world of greens. There is so much food variety out there that I never really noticed until I needed to figure out what to eat after quitting meat and dairy. I look forward to your future vids.

I just bought tofu - Nasoya Organic Super Firm Tofu. It is hard pressed so you can fry it without it falling apart! I had it in a restaurant but couldn't find it in the supermarket. Yay, great find.

I’ve been vegan for almost 2 years!! Best purchase is an instant pot! Your beans are done soo quick soups etc.... try sweet potato with avocado garlic salt and nutritional yeast and black beans so great!

I really enjoy your adventures. You are honest, transparent and just so refreshing. For me, who is just finishing raising kids, and winding down my work life, it's so inspiring to see what you are/have done to live your life authentically. We bought an RV last year and began traveling. This year Alaska! Someday, it will be how we live for the winter Months. I hope you dont feel you have to "Justify" anything ie: what you eat, wear, do. God made you perfectly..You are precious👌💖

loved the off the cuff ideas of how to use your food, the thing I like about using mostly spinach and kale rather than lettuce is that it has the flexibility to be cooked which stood out for me once when I made a salad for a potluck and a man didn't have teeth, we stir fried it and he loved it! Thanks for this food series!

Homemade hummus is garbanzo beans, tahini, lemon juice, olive oil. I use a processor or blender but I’m sure it’s easy to fix by hand. Nothing better. Baba ganoush is a roasted eggplant added to hummus. Delish! Both good with veggies, pita chips, on bread.

I made hummus in the RVan 🚐. Half can of garbanzo,whiz in Bullit powered by inverter hooked to 1 solar panel on roof. Takes less than a minute. Stir in other ingredients, no oil!

Carolyn, that is a beautiful selection of food. I am not vegan, but I don't eat a lot of meat and I rarely eat beef. You look younger and more beautiful than ever, from your hair on down. Lately, I feel like I'm heading in the direction of veganism, but I have a problem with giving up dairy. If I ever become a true vegan, it will be because of you.

Even though I am a big meat eater I have just recently found out that I am gluten intolerant and I never thought about my Dairy I do eat a lot of that as well so I basically had you on in the back for noise and kind of halfway listening and it was very informative and I might just have to see about knocking that stuff out of my life as well thank you for sharing

If you are gluten intolerant (meaning to the protein of ONE of FEW grains) it is important to know that you most likely can tolerate SOME (or most) grains. Wheat is the number one suspect (because it is everywhere in our nutrition, but there are older forms of wheat (from which it was derived) - and you may be able to eat them: like spelt or the very old variety emmer / einkorn (Triticum monococcum). Gluten is the specific protein of different grains, and being intolerant of one, does not mean all. You should also be able to eat oats, barley, buckwheat, and millet. Millet is many different plants but they are sold under the same name, they taste pretty much the same and are used the same way. And of course rice and corn. Rye protein is not accessible for humans, but most can eat it (they just do not benefit from the protein in the grain). I read that the traditionl long time allowed in sourdough baking (when preparing the dough and for the rises) made rye bread better digestible for humans in general. I know people who cannot eat bread with rye (meaning the store bought bread). They might be able to tolerate artisan or self baked. Which is of course not a good choice for campers.

Love the tips about eating more vegan friendly. My husband is a meat and potatoes guy but I’m trying to slowly introduce different veggies that he won’t just reject outright. It is a SLOW process but I’m making small baby steps to a healthier life. My long term goal is to get an RV and travel the US. But it will be years before we can get out from our family responsibilities (aging parents need us close and have to pay off our kids college loans). But I want to still be able to hike and move around so I’m focusing on eating healthy!

I too am a Plant-Based eater. When you mentioned a couple of years ago that you eat plants, I decided to start watching your channel. Plant-based eating saved my 23 year old daughter from crippling arthritis. So, I joined the concept in support of her. I don't identify with animal rights activists, but I'm no longer in favor of farming animals to kill and eat them. If anyone wants to know what convinced me, look at Dr John MacDougall on youtube. It's amazing how health improves when you stop eating animal products. Great video.

I too keep my diet simple as possible and on an occasional Sunday will go all of and prep some more creative meals for the week. You seem happy and I’m so amazed at your adventurous self and your sharing your journey with us. I appreciate you so. I used to have such a hard time trying to find all the organic foods and spices. The closes whole foods store is so far from me. I don't anymore. A lot of regular stores sell these foods now. The Kroger's I live by has just about all of it. That makes it so much easier for me. Take care Carolyn!🤗❤️

What you think is ordinary or mundane, may not be to others (me). Even the little things like condiments, how you prepare different things or the way you combine them, is so helpful. For instance, I purchased hemp hearts for the first time but have only been adding them to my oatmeal, but now I'll try them on my salad. Chopping the kale like confetti is brilliant. I appreciate the work you put in to your videos and that you finally broke down to show us your food ideas. You are my kinda cook/eater- most of the time I'll take the easy way and eat simply. Thank you so much! P.S. I hope you rescued that poor little avocado that rolled out the door!

FYI- look at the ingredients on your olive oil! I just discovered that a product can be labeled olive oil with only %20 actual olive oil. Sorry for the long comment, but one more thing- I thought growing your own sprouts might be a way for you to have fresh greens no matter how long you're out boondocking. Mung or moong beans have good protein and are super easy to grow

You are right about milk. My husband and I started Juicing a week ago. It is Amazing! I just did a 24 hour water only fast and may do a dry fast next. People tend to be afraid of eliminating meats from their diet but it is good for the body to do so! Happy travels!!!🤙🚐🌻🦋

Get an Instant Pot. Fewer dishes and you can cook brown rice in less than an hour without watching a pot. You can make a soup in the same time it takes to heat up a can of soup. At least three RVers I've watched own them and love them.

Put those pinto beans in the crock pot with a diced onion and some turmeric, black pepper, pink Himalayan salt and some vegetable stock and let it cook on low or on high for a few hours. The beans are already cooked, if you have them in a can, but it doesn't matter. Or you can get the dry beans, soak them according to directions, and cook them all night on low. You can add paprika for color and flavor, also garlic powder or minced garlic in olive oil, which comes in a jar.

Beans, husby wouldn't eat until I started Triple Soak. Overnight soak, discard water and rinse, new water soak all day, bedtime repeat, in morning clean water and cook . No digestive trouble and we eat the same thing for a change

This is great! One fave use of tofu: vegan palek paneer, with Trader Joe’s curry sauce, spinach and tofu cubes in place of the cheese cubes. Yum! Oh! Here’s an awesome breakfast salad: chop celery, apples, and walnuts. Dress it with lemon juice, grated ginger & a bit of honey.

Great info. For those who are trying to get away from sugar, rice vinegar comes with and without sugar. of course without sugar is more difficult to find. I had given up on rice vinegar until I learned that. I won't have a freezer so am thinking of using a solar oven to dehydrate some of the extras, like stews or chili or vegies about to go bad.

Yay! Always love learning about food! We tried and succeeded for one year at being true Vegan's. We fell off the wagon though because we just love cheese and dairy to much. We now like to call ourselves 75% Vegetarian. We learned so much that year and really enjoyed testing ourselves to live Vegan. Watching this video has been very inspiring and is now putting thoughts into our heads to maybe slowly start trying to cut out the meat. Thanks for sharing this wonderful information with us Carolyn. Have you tried Miyoko cheese? The BEST vegan cheese on the market. They have soft cheeses like brie and a couple of harder cheeses like smoked gouda and cheddar-like. One of my die hard meat eating friends tried it and he loved it! That might help with the dairy cheese craving! And vegan ice cream.. oh my!! good luck and thanks! Although I am not a vegan or a vegetarian, I have a lot of health issues (due to autoimmunities and sensitivities), and eat many of the same foods you showed on here. Mostly I eat Paleo, focusing on small quantities of sustainable, grass fed and finished, and pasture raised animals and animal products and tons of veggies and healthy fats. I would like to become a vegetarian in the future, once I heal, but am not there yet. I look forward to seeing more of what you cook and eat. Thanks for another great video!

Great video. Your energy is truly contagious. Vegans do eat honey, by the way. We don’t eat meat, fish, egg, or dairy products. They also have been known to wear leather, if they have it. (I sometimes wear my Dad’s leather jacket from WWII.) I think people often confuse a dietary vegan with the newer, PETA-type vegan. My veganism (40+ years of it) has to do with healthy diet, nothing else. There were no politics involved in my decision, although I also didn’t find it necessary to hurt our sweet animals, which made my farm family crazy. It’s more of an antediluvian-type diet. Hope this doesn’t start anything mean. Just wanted to clarify. Oh, and I’m on board for some cooking videos. I have a feeling your cooking ideas are going to be so much fun to watch.
