Ingredients for dough : 1kg White Flour
4 Egg Yolks
400-450ml Warm Milk
100g Unsalted Butter ( melted )
50g Sugar
14g Dried Yeast
A sachet Vanilla Sugar ( 8g )
Lemon zest from1 Lemon
A pinch of Salt

For filling : 1kg Cottage Cheese
150g Sugar
100g Raisins
2tbsp Semolina
2 Eggs
1tbsp Rum Extract
A sachet Vanilla Sugar ( 8g )
Lemon zest from 1 Lemon

For brush : 1 Egg Yolk + 1tbsp Milk

To being with , hydrate the raisins with a spoon of rum extract. Add a teaspoon of sugar to the yeast , a teaspoon of flour and a bit of warm milk. Let the yeast rise for 5 minutes . Add a pinch of salt to the egg yolks and mix for a bit , then in a bowl add flour ( save 60g ), sugar, vanilla sugar, lemon zest, egg yolks , the yeast and gradually add in the milk.
Knead until you obtain a dense dough and gradually add in the butter , then continue to knead for 5 minutes .
Use the flour you saved earlier to sprinkle on the table and knead the dough on the table for another 5 minutes . Your dough needs to be elastic and not sticky .
Grease the bowl with a bit of oil , place the dough back in it , then cover the bowl with cling film and a towel , and let the dough rise for an hour .
In the meantime, make the filling by putting the cottage cheese in a bowl and mashing it with a fork. Add sugar , vanilla sugar, lemon zest, semolina and eggs, and mix everything really well , then add the raisins .
When the dough has risen enough , take it out onto the table which needs to be greased with oil , and divide into 4 equal parts . Roll one of the parts into a rectangular shape , then slice it into squares. Add some of the filling into each square, bring the corners together so that you get the shape of an envelope .
Place all the pastries on a tray and cover them with a towel , so they rise for another 30 minutes. After that , brush each pastry with an egg yolk mixed with a spoon of milk. Bake for 25-30 minutes on 180degreesC .
When done , take take the tray out the oven and powder the pastries with powdered sugar ( optional ). Enjoy !
