Braided brioche with a spinning crumb
Make sure all ingredients are at room temperature
1.Knead the dough for 5 minutes in the food processor at speed 3
2.after 5 minutes add, 20gr fresh yeast
3.Knead the dough for 5 minutes in the food processor at speed 2.
4.after 5 minutes of kneading add 85 gr of soft butter
5.Knead the dough one last time for 10 minutes at level 3 or 4
6. 10 minutes later,cover well, andlet rise in a warm room, for 1h30 to 2h
7. 2h later,degas the dough, then cut into 3 dough pieces
8. roll each piece, form 3 sausages.
9. Glue the 3 ends together and form a braid
10. Do not tighten it too much because the brioche will swell well.
11. Let it grow for 1 hour, always in a warm room.
12. 1 hour later brush the brioche with 1 egg yolk and 1 tbsp of milk.
13. Sprinkle with coarse sugar.
14. Bake at 338 ° F for 30 minutes + or - depending on your oven.
15. let cool well before unmolding.
