Not getting paid isn't so much of a risk nowadays, as most hosts will ask you to transfer money into their account to ensure winners get paid at the end of the night. As most people have smartphones with access to the internet it's an easy thing to do. If you don't want a transfer, then they can just write you a check or go to the bank the next day and make a cash withdrawal for you.
Locking up a win is very important especially if you got that win by getting lucky. Don't convince yourself that it was 52/48 when it was really 89/11 or worse.
