I thought of this because chuck roast is becoming too expensive like the price of brisket so i said maybe beef stew might be cheaper and on the plus side the butcher already did the trimmings for me lol. Thanks for your kind words!!! I also came from a stick burner/off set smoker and man I can tell you that you are gonna love it and not like it at the same time lol. The great thing and probably the best perk about this pellet smoker is that we dont have to baby sit the smoker and watch the temps. The only thing I dont like is that the smoke flavor is not as bold as using a logs or chunks of wood flavor on a stick burner or off set burner. However I can testify that I love pellet smoking. I always thought that poor mans burnt ends was always made form a chuck roast so then i thought of why not try using beef stew and the crazy part the butcher kinda did all the trimmings for me lol. Great job bro they look absolutely delicious!!!! Another great video from the pit master himself!!! Finally got my Austin XL and I love that thing. Got a small request bro the other day I made some steak, chicken, and shrimp fajitas on my Vision Ceramic grill and my wife loved it. I marinated the chicken and steak in a Goya marinade and the shrimp in a sweet and sour marinade and along with the peppers and onions as you would say “it was phenomenal” it’s a big cook but it’s worth it!!! How about a fajitas video you don’t have to give use all of those different meats but I would love to see how you would do it!!! Keep up the great work bro 🙌🏽🙌🏽🙌🏽

Smokin’ Jazz Bbq good flavor and all but a little dry. These were tenderloins so a little small. I have 2 tenderloins left in the freezer and some cheap bacon. I’ll wrap them next time. I’ll try injecting some butter in them.

Perhaps a stupid question, but before you transfer them to the pan, they are on a mesh or a rack...what is that exactly?

Not a stupid question at all!!! I would have ask the same question. The reason why i use a wire rack is because it makes the clean up part a lot easier lol. Also the pan catches any grease that might drip down to the heat shield that might cause any flames to spark up. Hope this helps. Thanks for watching and for your time to comment. @@pittman7177 Well I would recommend a few things. 1) Use any temps under 300 degrees to cook your meats or whatever you're cooking. The reason is because the higher the temps the more fuel you will be burning. Plus you are filling 2 departments up with smoke and heat, the smoke cabinet and the bottom grill area. 2) Make sure to do a deep clean on the unit every 3rd or 4th cook depending on if they are long cooks or not. For example if you cook a pork butt or brisket I would clean it afterwards. 3) Do not ever use it the unit when is raining. My cousin's friend did it and the unit shut down and never turn back on. Sorry for the late reply but i didn’t temp them at all. I just went by the tender feel test. Which let me to pull them right before they turn into mush. If i had to take a guess i would say around 190 to 200 (f). Hope this helps. Thanks for watching and for your support. Salute!!!
