Ingredients:
1. 2 lb Pork belly (follow my pork belly recipe).
2. 2 Tablespoon lemongrass.
3. A pinch of lime leaves.
4. 1 Teaspoon roasted dried chili.
5. 1 Teaspoon fresh Thai chili.
6. 1 Teaspoon mushroom seasoning.
7. 1 to 1 1/2 Tablespoon Laab Namtok seasoning (sour powder).
8. 1 1/2 to 2 Tablespoon toasted rice powder.
9. 1 Teaspoon Lucky fish sauce.
10. 1 Tablespoon fresh lime juice.
11. Small handful of green onion.
12. Small handful cilantro.
13. Small handful gulantro.
14. Small handful mint.
