Pork Breakfast Sausage Recipe This is an updated version of an earlier breakfast sausage link recipe we did on the channel. The flavours stay pretty true to a traditional North American Breakfast Sausage links recipe. You can make breakfast links or breakfast sausage patties with this recipe, and your links can be fat or slender; your choice.
Ingredients:
2.25 Kg (5 pounds) pork shoulder
4g (15 mL / 1 Tbsp) ground sage
3g (15 mL / 1 Tbsp) dry thyme leaves
5g (15 mL / 1 Tbsp) dry rosemary leaves
15 mL (1 Tbsp) brown sugar, optional
33g (30 mL / 2 Tbsp) coarse salt
4g (10 mL / 2 tsp) crushed red pepper flakes
3g (5 mL / 1 tsp) freshly ground black pepper
3g (5 mL / 1 tsp) garlic powder
4g (5 mL / 1 tsp) paprika
Around 225 mL (15 Tbsp) ice water
Some ratios to bear in mind:
Around 3 Tbsp water per pound of meat
70% lean 30% fat
1.5% salt by weight of meat and fat.

Well it's nice to hear someone else uses pork sausage in their turkey stuffing. I make mine like me Mum did. When I tell my bud's they look at me like a dog tilts it's head ha ha. All they ever ate was seasoned bread stuffing out of the box. Lucky me.

A tip for making feeding the casing onto the horn easier is to get a little water in the skin so that it lubricates and opens the skin as you feed it on, then any excess comes out the other end. Just something I picked up as an apprentice when I was making hundreds of kilos of sausages a day

I took this recipe, reduced and simplified it for 1 lb and used beef. Half I used to make a mostly meat turkey roulade, inspired by your roulade video. It turned out great for my first time. The other half of of my breakfast beef I flattened and stuck in my new dehydrator and made a jerky. I was pleasantly surprised at how good it tasted! I plan on making a spice mix using your proper proportions for next time I want to make this. Thanks Glen!

Love sausage. Have you ever made sausage balls. They are rather a southern finger food type thing to serve at parties. Made with sausage (preferably Hot with the pepper flakes), Bisquick and sharp cheddar cheese. They are also good on a buffet breakfast bar. Y'all have a Blessed day.

I would make a DIY smoker. Jamie Olliver uses it all the time. As for the grinder/sausage maker, my 800W Kenwood bread mixer has this attachment. As a matter of fact, I bought mine in December months when they give away freebies. Instead of juicer, I asked for sausage making kit. Good call. Very fiddly to use and CLEAN. Helps to oil it. Helps to add soaked bread at the end until it pushes out all the meat and you see the bread coming out, so you stop there. I used the sausage making kit twice in 7 years. Good investment, lol? Glad it was a freebie.

@@shelldie8523 Filling the sausage casing was not easy the first time i tried. I gave up and made burger patties (half pork half chicken with french herbs). The second time I was able to make a Cumberland style sausage. When you work with sausage casing you will see what i mean. It has a "user manual" too.

If you squeeze out a little bit of the stuffing on the pipe-end, it will form as a pillow-arrow for the casing and it won't break, also easier to put it on. It doesn't matter if some of the meat went in the casing on the pipe, it's gonna get there anyway. Just turn the handle a little bit more after you put on the beginning of the casing.

I'm amazed at the kitchen equipment he has. He must have a big place to store all that stuff. I mean, who has a dedicated sausage stuffer? It's not exactly small either. Also, I wanted to mention for a while now, I love how Canadians say certain words like "out". I can't even describe how it sounds to me. Makes a Canadian, or American from the far North stand out every time.

The best breakfast sausage I’ve ever had was at a small breakfast place (now defunct I think) in the town of my birth in 2016. It was from a butcher shop across the street (maybe they’re defunct now too). Perfect spices, perfect amount of fat. Maybe I have to try to make my own... I was back there only because of my parents. They’re now dead and all family property in that town has been given away or sold.

Hey Glen quick tip for ya forget ice water and grind ice cubes to push the last of your meat through the grinder keeps meat cooler and helps clean the grinder at the same time.

Made this today - very, very tasty. Borrowed the kitchen aid grinder attachment from my sister in law and that model didn’t come with the stuffer, so we went with patties. Didn’t have as small of a final disc, but it turned out great! Thanks again.

Always and always loved your receipes. Excellent and so delicious, moreover you give so detailed and precise weights in grams, it comes out tasting the same everytime. Question- is it feasible to incorporate pink Pink Salt if this sausage needs to be stored for extended time. However thanks for all the efforts and hardwork you put into all this. I appreciate a lot.

I quite like making breakfast sausage. I make patties and I also use it to make sausage rolls. I think I am going to try frying some then freezing it for breakfast wraps.

In Kenji's book The Food Lab, he says to put the salt and spices on the meat and let it sit overnight before grinding. It works really well to distribute everything evenly. Great video as usual.

It does help, but unless you have a good grinder setup, can cause the grind to be sticky…..

@@Ottawa411, try spinach, ham, and tomatoes. In my opinion, lettuce is wrong with cinnamon. I'm a big fan of ham sandwiches with cinnamon raisin bread. Usually use creamy Italian dressing and chipotle mustard. Sausage would probably be really good.

You can check your seasoning by frying up some before you put it in casings.

small little tip i seen people do is putting the grinder in the freezer to keep that frozen longer so you also dont have to worry about heating up the sausage so fast

That's a great tip if you are grinding 100's of pounds of meat at a time in the summer - but for 20 pounds or less, on a small at home grinder, it's a bit of overkill as long as your meat is chilled.

Instead of putting some of the ground meat in as a pusher, use about 6" of plastic wrap . Pushes everything through but doesn't go itself.

We add about an ounce or two of water to the inside of the casing. Makes it much easier to get the casing on the horn.

I find it easier to put the casing on if you have a small amount of sausage sticking out the end of the horn.

Kenji and/or Sous Chef Eric uses a finer grater for the first grind and then a coarser grater for the second grind. I forget why but there was a reason for it.

Instead of shoving a handful of second grind in to push out what's in the grind tube, try ice cubes. This gives the added benefit of cleaning out the grinder a bit.

At that point I'm finished grinding - so I just pull it out with my finger when I tear down the grinder.

you say to use coarse salt, which I would assume means kosher salt, but 33g for 2 tablespoon is closer to table salt. for example, morton table salt is 1.5g per 1/4 teaspoon, which would be 36g for 2 tablespoon.

Hey Glen.. Love watching you make the sausage but was curious. In two of the videos when you're changing the grinding die that there's still a lot of meat held in the screw. I seen other people toss a slice of white bread into the feeder at the end of their grinding pass to clear the tube and make sure that everything was ground. (pass the bread through, and turn off the grinder when you see the bread start to pass out of the die). Anyway, I was curious if you were aware of that technique and if so why you weren't using it? Thx.

Note on grinders as I've watched further; always pull out all that meat that is left before switching plates. You can clog the plate/ruin the grind quality with smearing. The plate should get a light smear of crisco so you're never doing dry metal on metal. No explanation necessary. Skipping these things are why you see that grocery store ground beef that looks creamy. It will fat out more and you'll lose yield and harm the texture.
