Let's turn this awesome Boston Butt from Porter Road into one of best Pulled Pork recipes you'll ever eat. Pulled Pork and Bacon Grease. A little pork on pig action that will make your head spin. This pork recipe hits all the taste buds. You've got sweet, salty, heat, savory, richness and just about every other culinary word in the chef's dictionary.
And the BBQ sauce is simple and delicious. I will have a jar sitting around from now on.

1 C water
3/4 C brown sugar
1/ 4 C Worcestershire

I cooked 2 packs of applewood smoked bacon today and the whole time all I was thinking about was when I smoke on my offset I use apple wood and it smelled the same so I saved the grease thinking im using that on my next pulled pork instead of butter I searched it to see if anyone else does now I can’t wait to use it lol thanks man also I want to make that sauce sometime looks fire

Made the sauce today...very tangy, but wow! It blended so well with the fatty richness of the butt I smoked. Definitely a new go to favorite. Thanks for passing the recipe along. Looking forward to trying more of your cooks.

At the beginning of this video I said... A fail proof pulled pork is one that doesn't need sauce, just like a good burger doesn't need ketchup. After watching the video I will be combining some things with my pork and a may even try the sauce. I feel like your sauce compliments the pork rather then just making it edible.

I'm in total agreement. If you have to drown it in sauce you might need to work on your meat game. I like simple vinegar sauces myself. This one had the right balance and sweet and tang

I usually add the jus and vacuum seal. I like leftover pulled pork better than fresh.

Watching my Grandmother's cooking.....she put a spoonful of bacon grease in everything......it was stellar in the rib wrap Now when you make ya some popcorn.....throw a tablespoon of bacon grease in with the oil .....you can thank me later......it was also the secret to her fried chicken

What a difference taking the time to pull it right makes. I have smoked a lot of pork butts but they never turned out looking like that. I always rush through that process I think next time I will take more time when pulling it. I am curious why you rest it in your oven for 10 hours? That is a new technique for me. Sauce looks amazing! Well done Jay.

The theory is that the longer cooks like a pork butt/brisket the longer the rest time should be. it gives a chance for the juice to get re absorbed back into the meat and allows the muscles to relax. which causes the meat to be more tender

This was a first gorgeous me on an oven rest. But Sam nailed it with his comment. You can almost guarantee tenderness with this method. Also, I believe with such a long rest, more of the juices absorbed back into the meat compared to a 2 hr rest in a cooler. This hard bacon flavor throughout the whole butt. Even before adding jus back to pulled.

That’s some fine dining there Jay! The bacon fat is like putting wagyu tallow on steak! Not sure if I could get through the night without digging into that pork butt! Great cook and recipe!

There is enough vinegar is this recipe to keep it good for a while. I've kept it for a couple months. Wouldn't be afraid to go longer but I always run out before then

I just sit on the counter in the kitchen. It hasn't made me sick yet so I guess I'll keep doing it. If you quit seeing new videos coming out, it might mean the bacon went bad.

It did. I was not expecting it to be as flavorful as it was. They long rest let the flavor get deep down into the meat. I will be using this method more often.

OOOOWEEE That there is one good lookin pulled pork! Have you ever tried the Meater Probe? I have one on my wish list... would love to have ur opinion on it Mojo style!

I have had my hands on the Meater. Great product for sure. The only issue I have is the size of the probe itself. It leaves a decent size hole when you pull it out and that could cause an issue with brisket slices or a steak in comps. But I'd use it all day at home.
