This dish is called "Moo Satay" by Thai people, it is a very popular street food in Thailand and also in Asia but in different names. It is strange that most pork satays are all small in size due to cost constraints. Let's make pork satay ourselves. Using our restaurant's recipe which adds no pork fat in it. For healthy concerns, we use only pork neck without adding any pork fat. We believe it is delicious enough with its own fat and it looks so good when it is grilled. This is our little secret about the Peanut sauce. The taste must be balanced between Curry pastes + herbs and the Peanuts. If you taste and feel that either of them is too much then re-balance it.

I told my son : "You can do two things at once, but you can't focus effectively on two things at once." Sometimes we get confused about whether to choose A or B or both. People who are good at focusing on the big picture have an advantage. It may not be a matter of priority or importance. It's about making the most appropriate decision. Same as cooking pork satay, if you choose deliciousness as priority, you will inevitably add pork fat. But if we focus on the overall picture, both health and deliciousness, the perfect point is in choosing to use pork neck and no more pork fat needed.

Remark : I cook for my son almost everyday so I have to be Creative. I worked as a creative for advertising company, it is a bit of challenge. Using mostly the same ingredients from the stock in my fridge, the ideas could be useful for others.
