Pork Shoulder on the Kamado Joe Big Joe

2 Pork Shoulders for pulled pork, cooked perfectly on the Kamado Joe Big Joe. Used FOGO Super Premium Lump Charcoal.
• Started with two boneless pork shoulders
• Seasoned one with Cool Smoke Everything and one with Pork Beach Sauce Company “No Mis-Steak Rub.
• Set up the Big Joe for indirect cooking for the entire cook, deflection plates on the bottom and both racks at the highest position.
• We used FOGO Super Premium Lump Charcoal.
• Brought the grill up to 250 degrees to start the cook and added cherry wood for smoke.
• Placed the Pork shoulders on the grill and when they reached about 160 degrees I wrapped them.
• When the pork shoulders reached about 198 degrees, I unwrapped them to finish off.
• One of the shoulders was probe tender at around 204 degrees and the other one took until it reached about 210 degrees until probe tender.
Summary: There were some of the best pork shoulders that I have done, the rubs were nice and they were cooked to perfection. The FOGO Charcoal worked great, one load of charcoal easily lasted the 8+ hours for this cook. I highly recommend this!

Bamakettles Thanks! Yes, I just moved the Weber a few inches in this past weekend! Surprisingly the wheels really hold well, we just had some good storms and it did not move.

SDSBBQ Yes, I have done this one a few times and the KJ makes it so easy and I trust my probes! What you didn’t see, I was also doing some ribs on my Weber and was filming that as well. As everything was finishing at the same time, I spill pork fat all over my table and porch, broke a dish and had the wrong seasonings out for each cook and had to reshoot both endings! The cook was easy, the filming was not! LOL

That was awesome! The audio was just fine buddy. I was watching this with my 6yr old son and he said tour Kamado Joe was the coolest grill he's ever seen. Lookin good. I recently did one and it came out very oily. So much oil dripping off my hands. I ended up throwing most away. It was a boneless one like yours. Previously Ive done bone in and didn't have that issue. Did you experience the same thing?

Bud-man GR Thanks! So you made me think bout how this could be done on your Silver. My thought is front burner on to hold temp around 250 at the back of the grill until the shoulder gets to 160? . Possibly rotating the pork shoulder and possibly spritzing every hour? Then wrap and keep wrapped until it gets to almost 200 degrees Just some thought. I may have to try this myself? My biggest concern would be drying this out?

Nice Cook. I have a question on cooking inside my porch which I noticed that you were doing. How high does the porch ceiling have to be to cook safely?

Thanks for watching! My porch roof is about 10 feet high and I always move the grills to the outside edge for cooking. Everything I have read, they do not recommend doing this, but for most of my cooks I do not get too worried with the grills since I watch them closely for any flare ups. My wife does not like when I have a grill running real hot, but I feel I am safe dong this. My hose is always close and if something got out of control, I feel I could push the grill off the porch, but just closing the lid keeps the fire down. My disclaimer is this is in no way me telling you it is safe to do this! I feel using common sense and not taking risks works out for me to be under cover. Cheers!

Butts came out nice, I'm curios with your experience with kamato joe having set up the way you had, the drippings falling on deflector plates. Have you ever had deflector plate crack. I was wondering when you were pouring juices from tin foil into pan if some of that hit deflector plate would it crack.I have seen some on that have them crack and there not sure what caused it.

John Knapp Thanks John! These did turn out nice! I have had a few people ask about the deflector plates cracking? So far (knock on wood) I have not had any issues and I cook in all weather. It makes me wonder if they had a bad batch of deflector plates? If I learn more I will make sure to update you! Stay safe!

Theresa Conway I watched it again and I did not say the temp of the grill? Glad you asked the question! We are a 2 man team and I did this one early on in the pandemic, so I was on my own and was actually making ribs on another grill. Learned I cannot do 2 videos at the same time by myself, it is had enough when Jack is here shooting. I started these when the grill was around 225, I let the grill slowly rise to 250 to 275 while it is unwrapped. Once I wrap them, I let the grill come up more and level off around 325 until finished. I like to do it this way to get good smoke on early and then the higher temps helps finish them a little faster. Hope that helps! Cheers!

Causa Sui Sounds good! Let me know what questions you have? I am no expert, but I use the Kamado Joe Big Block and with a full load, I easily get 12 hours on a 250 degree cook. I have tried other lump that did not burn as long. Cheers!
