Pork Vindaloo | Mallika Basu

Vindaloo might be a dish that you associate with your local curry house, but Mallika Basu is here to show you how to make an authentic version at home. Mallika's recipe combines kashmiri chillies with coconut vinegar, ginger and garlic to make a gorgeous paste to marinade the pork shoulder. Caramelised onions and a whole range of spices add depth to the dish and give it it's rich colour. The pork is left to cook on a low heat until tender and melts in your mouth. Remember, a vindaloo doesn't have to make your eyes water, you just have to ensure you have a good level of heat and adjust the amount of chillies to suit your own preference. I just made and it was absolutely delicious! I didn’t marinate for long, just while I was cutting and frying the onions, so you can make the express version as well. I used 500g pork and we had with chapati. It was the perfect portion for 2. Love it 💕

I didn't know that as well! Very interesting. "Vinho e alho" - wine and garlic - somehow managed to sound as "Vindaloo" through Indians mouth, which sounds way more cool. What a wonderful example of cultural exchange that dish is! Cheers from Brazil.

The Portuguese name for the wine and garlic marinade is "vinha de alho". That's the origin of this dish.

I just made the vindaloo paste and it smells beautifully, I can only imagine the smell i I had the coconut vinegar. I will continue tomorrow. If you do not hear from me it did finish me off, but it was worth it :D

Cooked and eaten. Tasted excellent. I love how spicy it was, but at the same time it wasn't too much. Mine didn't turn out so dark though. Thanks for a great recipe!

OMG, Mallika! I made your chicken korma 3 times and now this vindaloo!! I was never a huge fan of Indian food, nor can I handle hot spices well....but that was probably just because I've only known indian from eating a few times in the restaurant....but this....this is another level! You could try any hot red peppers, if you use fresh ones pls do deseed them first. Add some paprika to get the lovely red colour. Enjoy!

yayy...a Goan recipe gets featured. An all time favourite on all Goan occasion back in Goa. traditional the masala (paste) was grinded on grinding stones and cooked in clay pots with coconut spoon. slurrrppp

At last, a proper Vindaloo recipe, I've never got round to roasting the spices, although I know I should, but the end result looks stunning. This is on the menu mid week for sure. Plus shoulder ,meat is sooo much tastier than loin!!!

I only had new mexico chilis and some Chinese small red chili on hand, so I used half of each. It is marinating in the fridge right now. I also used pork loin. I am going to brown it then throw in crockpot. Hopefully it will come out delish.

This sounds and looks delicious. I just wish it had a bit more colour! But it's more authentic than the brightly coloured ones we're used to. I might try cooking this at some point. I love her accent! And as some have said, I would say that's more a 1-2 portion, I would destroy all that myself lol

Oh man making the other type of dishes that Mallika makes are a bit hard to come by. This recipe however you can easily substitute and or get them really easily in most grocery stores. Im so trying this for 4th of July.

made Vindaloo for the first time using this recipe, except that I used fresh whole chilies in the paste and then used cayenne pepper to turn it red because I wanted it very hot; it was bloody fantastic if I don't say so myself, thanks!

In Portuguese wine is "vinho", garlic is "alho" and a wine and garlic marinade is called "vinha d'alhos".

The biggest misconception about vindaloo in India is there should be potatoes in vindaloo. The d'alhos in Portuguese became "aloo" i.e potato in India :D Btw, I would love to see more recipes from Malika.

I never had a vindaloo in Goa, where this recipe was born, which had potato in it. So I am not sure where you had it though.

It'll probably be great too! I wouldn't use chicken breast though, go fot thighs, otherwise it'll dry out :)
