My vegan son came over for a family and friends clam chowder dinner. I saw your rich soup and thought how easy it would be to swap out many of the ingredients for plant based milk, butter, and vegetable stock. I then added vegan cream cheese and it was super delicous. My son told me he loved it, but he didn't have to. His face said it all as he devoured it. Thank you!
I made this today, and it tasted as sweet as if I had done a wine reduction. It was only whole milk and a touch of purified water. I did a full holy trinity for the rue, and left the flour cooking a bit longer to make sure it lost all the dough taste. There was enough color that I thought the soup would turn dark, but the milk took care of all that very nicely. Then I added smoked bacon and corn to mine.
I am so gonna try making this, this week😊. My boyfriend absolutely hates broccoli and he is on a mens trip with his brother. Right now I am on week 3 with a nasty flu and is craving some variation with the soups. I have mostly been making chicken noodle soup, curry and rice soup, and a classic clear danish soup when my throat is super sore and have trouble eating anything.

Hi, I'd made this soup today, but I'd had to tweak it just a little. I also added carrots and cauliflower with a dash of ground red pepper. Very good I must say.
