Hate the comments on this channel. This level of gastronomic creativity isn't intended to just taste nice and fill you up, it's designed to blow the dinners mind with an experience that is familiar yet wholly unique and outside the box

I agree. These chef's aren't making food to "fill you up". If you want to get full then get a burrito. They are trying to make culinary art. Haters just hate because they can't create.

Completely agree!! The people watching this channel are not chefs they're "harry homeowner" who think they can learn molecular gastronomy via RU-vid as opposed to paying to go to culinary school and learn to do it correctly. Haters gonna hate, just ignore the trolls! I myself love this channel and this video.

I wish everyone could appreciate these level of techniques of cooking as well as a fellow chef does. For anyone who's talking about filling you up with this dish, you're not wrong actually. It won't fill anyone up. But you should remember that these kind of dishes are 1 of up to 22 or more tasting menu that they serve at these level of fine dining restaurants. I'm sure that the guests will be "filled up" once they taste everything :)

As a cook for alot of years it's always cool to learn something that opens up a whole new trough of ideas. U could do this with anything potatoes so u could have a sweet pototoe glass desert .

huh, what was keeping that glass balanced? it didnt look like it had a flat edge on its base

It's just the center of balance, shape of the glass and friction creating a balance. You can do that too with a drink can that is less than a third full.

Yeah I guess so. It just seemed odd how quickly he balanced it, and then he adds a wafer on top later etc

There was a slight notch on the bottom of that glass that allows it to balance like that.
