Potato gnocchi

gnocchi
1 kg potatoes
250 gr flour
50 gr parmesan
salt and pepper
nutmeg
boil a kilo of yellow or red-skinned potatoes for 30-40 minutes.
let them cool but remember that to make the gnocchi the potato must still be a little hot.
Mash the peeled potatoes and spread out on the table.
Add 250 grams of flour, 50 grams of Parmesan, salt, pepper, nutmeg.
First mix and then knead.
Put a large pot of water on the stove because the gnocchi must be cooked immediately.
Create the gnocchi, as I show in the video.
Pass them on a fork or on a grater to make them rough.
Cook them in boiling water, when they float they are cooked.
If you eat them immediately, season them immediately with what you want, if you don't eat them immediately you have to cool them in cold water, drain them, and put them in the refrigerator with a little oil. The next day you put them in boiling water again.
