Our family chef was my cousin Dave we called him Bella, I am an only child so he was one of the closest to being a brother.. .he was such a big part of so many memorable events cooking gourmet meals for us.. . sadly we lost him to heart failure a few years back and now I find myself trying to do my best to pick up the mantle and follow in his footsteps.. .I haven't gone to school yet but I am always up for trying new recipes and techniques and my family likes the way I cook so I must be doing something right, obviously I'm not anywhere near the gourmet chef my cousin was but he is my inspiration every time I start to cook.. .I have even started a cast iron collection with several pieces that are family heirlooms being over 100 years old and still use them everyday.. .I have even started a knife collection and would love to add this Japanese Huusk to it.. . little by little I am strengthening the craft that my cousin dedicated his life to and hope that I can be even half as good as he was.

I would love to have a Japanese knife like that. My mom recently became disabled from a brain disease , so i've been learning how to cook from her for my family since she can't anymore. Having a knife like that would be really nice, especially considering i have chronic injuries to both of my wrists. I enjoy watching your videos in bed at night to help me relax.

Would love the Japanese knife! My daughters and I cook a lot together and I normally do most of the slicing and dicing. Having a sharper knife would be wonderful. Thank you for sharing what you do. Love watching.

I would love to have a Japanese knife. I’ve been learning how to cook for my family and I do woodworking so I have a handmade cutting board all I would need is the knife to complete my set to make food for my family. My dad and I have always enjoyed cooking and we've been looking for a good knife that has cutting durability, cutting performance, and resistance to corrosion and staining. I would like the knife since I cook a lot and have nothing but Oster knives, very dull. I recently made Potatoes/egg and cheese burritos and could barely dice the potatoes.
It's been 30 years since I cooked for a living. Been thinking about opening up a diner in my wife's hometown in Brazil once we get closer to retirement. These videos make me realize how inefficient and easily overwhelmed I was at the time. Question, though: do you set up higher and lower heat areas on the grill?

Love your channel never thought i could just watch someone cook but POV style is really cool. I keep wondering ok what would i have done then try to do your way lol. A knife i wouldn't need to sharpen everytime i use it because i use junk knives would be awesome but im sure they're lots of other people with stories why they should win it. No matter super cool what your doing
I would like to have the knive , my wife and i watch your channel,and recently my 17yr old started to watch it , im handy with my hands like , being able to do mechanic work and handyman things , i can also cook but my son has a passion for cooking now he wants to do something like that

New subscriber here: thanks for these POV videos. (I'm not in the US - don't worry about the knife.) I just wanted to say that these vids are oddly soothing. Something about seeing someone who's dedicated, diligent and skilled at things a lot of us take for granted creates riveting content oddly. It creates a lot of extra appreciation towards the people who do things behind the scenes. Great channel - to show what you do because it's just life/it's a love/it is automatic and effortless (whichever it is). Appreciation all round. Hope it takes you to new goals and dreams. Can you occasionally tell us what ingredients you are using to cook, for example a drawer under the griddle has chopped items but I am not sure what the are. The same with the cold items in the sandwich prep unit.

Do you enjoy cooking breakfast or the lunch menu? I like when you are doing the breakfast service. You have that entire grill loaded at times and you are like a well oiled machine.
