Ingredients : 3 Large Bananas
6 Eggs
300g White Flour
150g Sugar
150g Milk Chocolate Chips
150g Unsalted Butter ( room temperature )
100ml Milk
1tsp Baking Soda
A pinch of Salt
2tsp Vanilla Extract

Cream : 250g Unsalted Butter ( room temperature )
150g Sugar Powder
3tbsp Cocoa Powder
100ml Fresh Double Cream
2tsp Coffee Extract

Start by mashing the bananas with a fork . Then add room temperature butter and sugar in a bowl, and mix for a minute , then gradually add in an egg at a time , and continue mixing. Add the milk, mashed bananas, a pinch of salt, 2 teaspoons of vanilla extract and about 3 quarters of the chocolate chips. Then mix the flour with the baking powder, and add them into the bowl, mixing for another minute.
Choose a rectangular tray ( 35/25cm ) , pour in the mixture and bake for 30-35 minutes at 180degreesC. Once the cake is fully baked , let it cool down really well , and make the chocolate cream in the meantime .
In a bowl, add the room temperature butter and the powdered sugar and mix , then add 2 teaspoons of coffee extract and fresh double cream .Continue mixing until the cream is ready.
Once the cake has fully cooled down , spread the cream on the top , portion it and serve . Enjoy !
