Tang Zong
30 g all-purpose flour
130 g whole milk
Main Dough
300 g all-purpose flour
50 g granulated sugar
5 g salt
4 g instant yeast
65 g whole milk
50 g whole egg
20 g egg yolks
46 g unsalted butter
Maple Butter Sauce
60 g unsalted butter
40 g brown sugar
30 g maple syrup or honey (slightly sweeter)
20 g water
1/2 tsp cinnamon powder
A pinch of salt
A handful of toasted walnuts or other nuts
Cinnamon butter Filling
100 g unsalted butter
108 g brown sugar
18~20 g cinnamon powder (depending on your preference)
1 tsp cocoa powder
1 tsp vanilla extract
