Beef Brisket Soup (Vietnamese Inspired Pho)
Ingredients
• 2 -3 large beef briskets
• egg noodle
• Bok Choy & Green Vegetables
• 1/2 cup of chopped spring onions
• 1 cup of chopped coriander
• 2 blocks palm sugar or brown sugar
• 4 cubes pho flavor
• 5 slices of ginger
• 5 garlic cloves chopped
• 2 tablespoons corn flour
• 1 cinnamon stick
• 2 star anise
• 1/4 cup hoisin sauce
• 1/4 cup rice wine vinegar
• 1/4 cup light soy sauce
• 1/4 cup dark soy sauce
• 1/4 cup oyster sauce
• 3 litres of water
Extra condiments to serve (optional)
• chilli oil
• Slices of lime or lemon
Steps
1. Wash and soak meat with water and apple cider vinegar
2. Cut in small pieces
3. Prepare sauce by combining all the sauces together and stir to combine
4. Mix in cornflour slurry to sauce as well
5. Cook beef briskets for few minutes then remove, wash and transfer meat to instant pot
6. Add sauce and corn flour mix, ginger, garlic, cinnamon stick and star anise
7. Stir to cover meat in sauces and flavour ingredients
8. Cook on Manual String of instant pot for 40 to 45 minutes
9. Prepare broth by adding 3 litres of water to a big pot along with left over beef bones and 4 cubes of pho seasoning
10. Let it boil on medium heat for an hour
11. Cook noodles according to packet instructions
12. Cook vegetables in the broth before the meat is ready
13. Prepare soup bowls by adding noodles to bowl, then add broth, vegetables, meat and the rest of the condiments.
