The richest and most nutritious pate is prepared at home!
Ingredients
1/2 kilo of chicken livers, clean
4 cups of water
1 stalk of celery in pieces
4 black peppercorns
230 grams of unsalted butter, in pieces
2 teaspoons mustard
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1/4 cup chopped white onion
1 clove garlic
4 tablespoons of cognac or pisco
salt and red pepper
Preparation
Boil in a saucepan over low heat 4 cups of water with the celery, peppercorns, and salt for 10 minutes. Add the chicken livers and cook for another 10 minutes.
Then strain, cut the livers into pieces and pour broth into a blender, until the blades are covered. Add the liver pieces, butter, mustard, nutmeg, cloves, white onion, garlic and brandy. Season with salt and pink pepper. Blend until you get a uniform and smooth paste. If necessary, add more broth, little by little.
Rest the mixture for a day in the refrigerator.
Serve with toasted bread or crackers.
