Christmas cookie recipe:
1. Cut 150 g of butter into small pieces. Put them in a bowl and let soften.
2. In a salad bowl, mix 250 g of flour and 125 g of sugar. Dig a hole in the middle and pour in the yeast, cinnamon, vanilla essence, salt and previously softened butter. Knead with your fingertips. When the dough becomes sandy, place it on a work surface.
3. Take 2 eggs and separate the whites from the yolks. Add the 2 yolks to the dough + 1 whole egg. Mill with the palm of your hand until it is uniform. Form a ball, wrap in cling film and refrigerate for 2 hours.
4. After 2 hours, preheat the oven to th.7 (210°C). Roll out the dough to 1 cm thickness using a rolling pin.
5. Using a star cookie cutter, shape the biscuits and place on a baking sheet covered with parchment paper. Bake for 10 to 12 minutes. At the end of cooking, let cool.
6. In the meantime, prepare the icing: combine the egg whites, icing sugar and lemon juice in a bowl. Mix for a while until you obtain a homogeneous mixture.
7. Coat the biscuits with this icing and leave to cool. Then enjoy your Christmas cookie recipe!
