The general principle is to protect it from the worst of the winter: Pipework needs draining down so water inside doesn't freeze and crack it. The valves get removed from the pump whilst that is drained down just to guarantee no water can get trapped in there. The pressure gauge and injector are removed and brought indoors so water can't freeze inside and damage them. The lubricator is removed as the sight-glass on it contains water. Finally soot is cleaned from the inner surfaces and they're coated in a rust preventative as temperature cycling during winter months will result in condensation forming on the metalwork.
