I agree 💯. I no longer garden due to physical limitations and time constraints, but I do shop my local veggie stands and farmer's markets. I'm motivated to start preserving. I want to find a reliable group that we could share the expense of some of that fabulous equipment that makes preservation doable. Maybe I'll need to bite the bullet and buy things as I can and maybe rent them out to friends to help buy additional equipment. 🤔

100 percent agree with the above comments. Thank you Becky. I just dehydrated some basil from my garden (1st time ever -I’m 66)& am so proud of myself. 😊. And a few months back I started making freezer meals & what a godsend! Spent one Sunday making everything, had almost 2 months of meals for two.

I canned 22 jars of pickles today and cooked 8 pounds of chicken for a bunch of freezer enchiladas. Because of our wonderful Miss Becky, I had wonderful motivation, joy and enthusiasm. You have helped all of us so much! 😇

yes! homemade applesauce is the best. Used to make it for my little one's all the time and I would freeze it in little cubes to measure the amount I gave the baby each time. It was so good I even loved it. I used to also puree homemade soups and a mixed berries puree . I did it one day out of the week and would have enough baby food for 2-3 weeks. It was a lot of work but so much cheaper and healthier than store bought. I knew what I was putting in and I could watch for any allergies when introducing new foods.

You actually inspire me! I live in the middle of Los Angeles, in a tiny apartment. Growing my own produce isn't feasible but watching you preserve and do regular meal prep for 2 encourages me to make my food dollar go farther by preserving veggies and fruit if I can't eat them before they go bad. I spent my Friday making quick pickles and chopping and vacuum sealing veggies. I think I need a bigger freezer!

Becky, my husband and I planted 2 new apple trees 3 years ago. This year our trees yielded 27 apples. We are outside Portland OR 30 miles. After I watched your big fruit tree harvest I walked out and picked everything (20 apples) on those trees and I made an apple crisp. It is so exciting to make food that you grow! I did the same with my tomatoes. Yum salsa! Thank you thank you for showing us we can do it!

Wait another 8-10 years. Take care of your trees and you’ll have a couple hundred apples. I have 2 trees, about 14 years old. I trim them every year, so they’re only 8-10 ft tall. But, I’ve been canning, freezing, baking, etc., and I still have a bunch more to pick. Happy picking and baking. 😁

@@MRTIKKS_OFFICIAL You can do it either way. I always made the pies just like I was going to bake them, but instead I froze them. You can freeze just the filling in the pie plate (make sure you are lining the pie plate with plastic wrap before putting in the filling). Make the pastry then put your frozen filling in the pastry, keep pie covered so the crust doesn’t burn.

If you end up with a few left over apple pieces and also onions, consider trying out a caramelized onion and apple chutney. A small batch just to try out to see if you like the stuff and can envision it entering into your meal plans. People often love it or hate it. If its something you love and can use, consider it for next year's preservation efforts.

Yum! I will do pan fried boneless thick pork chops that I flavored with a touch of cinnamon and salt and pepper and serve with sautéed apples and onions(sautéed with olive oil,butter ,pepper n salt and again a just a touch of cinnamon). Super tasty served with a side of steamed jasmine rice or buttered egg noodles and a veg or salad ( bacon fried cabbage goes well with it or some delicious green beans).

I made 4 cases of sweet onion jam several years ago because it sounded real good. I cracked a jar and didn't like it. I'm not 1 to waste things si several years later I opened another jar to try. It was wonderful. I now usually let things with caramelized onions set a year. It actually taste more like fresh caramelized o ions to me

Becky, I love watching you do everything you do. I am having a new kitchen put in and my new island I have made sure I have deep drawers and putting my baking supplies in the drawers. I cannot wait for it to be completed so I can arrange the island as you have done. I have a butler’s pantry and I keep all my overflow of dry goods and large pots. I cannot wait for it to be completed. I am 74 yrs young and still cook and bake and I will make the best of this new kitchen thanks to you. I buy my fruit and veggies from local farmers and we purchase 1/2 a cow a year. I share so much with family. My daughter comes over and we cook together and my grown granddaughter joins in. My grandson does a lot of canning and freeze drying at his home. We all share so much. I love your channel and I have a lot of family members who now follow you. In the UK, we call that a “crumble” We make them with different fruits, Rhubarb, Blackberries, Gooseberries. One of my favourite puddings with custard 😊

Hi Becky! I always press a layer of the crisp topping in the bottom before adding my apples and the topping. It makes a nice bottom that makes taking it out of the pan a little easier so it doesn't fall apart and it absorbs some of the juices and is absolutely scrumptious!!! Give it a try on one pan and if you don't like it you don't have to do it again. :D

@acre homestead BECKY, I’ve been wanting to comment on all of your video’s . I have watched every single one. I found you about 18 months ago and you soon became my one and only go to channel. I wanted to see a FULL START TO FINISH GARDEN before I started mine this year. I’ve had it ready since may 2020 . My custom made raised beds with legs and now I’m the proud owner of 3 green stalks. I live in town so I don’t have a ton of space but I think it’s perfect for us empty nesters. I wanted to tell you that I’m not into any type of food preservation what so ever! Fast forward to today as m ordering CANNING SUPPLIES AND BRINES I BOUGHT A DEHYDRATOR ALSO, I MADE YOUR BREAD! I’ve never made anything with yeast, it was so intimidating to me. Now I make bread every weekend because it’s that easy with your method. Oh, and I purchased a Dutch Oven just to make the bread, but am finding that we are using it for so many other things………we love it. Here's my "secret" to applesauce: use cider instead of water when cooking down the apples . I do cut out cores, but leave skins on for the extra nutrients and pink color. It's how my mom made it!😊

I just made a combo of fresh pear/apple sauce from just picked fruits and used cider as my sweetener. It reduces beautifully into the sauce and adds so much punch. I also used a few tablespoons of freshly squeezed lemon juice and 2 teasponss of cinnamon. Plenty sweet. No sugar needed! Depth of flavor up the wazoo.

Hey Becky! What we do here in my home is to put the garlic cloves on a container with water for a few hours (usually we do it at night so it’s definitely ready the next day), and it makes it soooo much easier to peel. You should give it a try!

What a hassel... Water Bath ??? Just put the Garlic Cloves onto the Counter Top... and press Down on a Lidded Jar, bam 💥 you have ready Crushed, de-skinned Garlic. (Or bash them with a Garlic only (use) Mini Rolling Pin. No Garlicy cross over in Sweet Bakings etc. 😉 My mother, when I was a Kid, in France, for x1 Year had Wooden Soled Clogs, just put the Clove on the Floor, and bashed it with the Heel of her Clog. 🤭 French Cuisine in the 1970's... Farmhouse Simplicity, no faffing ! I just use the Heel of my Hand and Crush down, on that Garlic. Cooking gives you Muscles. 🤣

Hey sweetie, you are amazing. I love watching your vlog and look forward to it every day I canned years ago, but ever since I started watching a lot of Homesteader channels like yours on RU-vid (and there are lots of really good ones,) I caught the bug this year. It began in the spring. I bought myself a Pressure Canner for the first time. Thus began my adventure in Canning. I have had so much fun canning everything from pickles, tomatoes, various kinds of soup, carrots, potatoes, jams, barbecue sauces, salsas, cowboy candy, Onion Jam, pork, beans, (brown & the dry kind like pinto and black beans.) I have done all this between March and the current date. I have cases and cases of produce that I have canned. My best friend Carole retired in January and I recently talked her into joining me on my endeavours and she did with gusto. We have had so much fun working side by side sometimes chatting away, and others in that comfortable quiet that best friends can share in. It’s been a load of fun. I will be 65 in December and I live in a 1 bedroom apartment with no storage room to speak of and let me tell you that we have been very creative in our finding room for all my canning goods. Not that it’s important, but I am in a wheelchair and am disabled so quite often I need to take a break. It’s not always easy, but it’s been so fun for me. And at the end of this I will have all this canned food to live off this winter. You might ask well, “how did you get the produce to can?” The answer to that is simple; we searched out the best prices from the grocery stores. I am on a limited income, and though I would have liked to buy only organic from farm stands; that was not an option for me, so I did the best I could with the resources I have. I feel very blessed to have what I do. Along the way I have found others to teach this craft to as you will find the canning can be contagious! Of course you will run into two schools of thoughts… One, they think you are nuts for spending so much time and recourses making something you can get at the supermarket, and then two, people are impressed with what you are doing and wish they had the same skills. Me? I really don’t care about the people that don’t understand it…. I know I am preserving food at the best prices I can find and I will have all this to live off in the coming year. I know I have frozen the prices that I paid for things. And you know what? I’m having fun. I’m not sitting there feeling sorry for myself… I’m doing something to become a little more self-efficient!

One year when I was preserving peaches I saved the lemon juice and put it in ice cube trays. It made the best cubes for iced tea.

I love watching you, i used to canned a lot and make frozen apple pies, applesauce and apple jelly. Not so much now, because of my disabilities and my age and I'm alone now so I don't have no kids to provide for. But i love watching you doing it. It makes me feel like i am going back in time. If that makes any sense. Always like looking at my shelves, after the summer is over and look at all the food i put up. Its a nice feeling and it taste a lot better than store bought stuff and you know what's in it. So i really enjoy your videos, thank you so much. I can't wait to see your baby, when its born. Our trees didn’t produce this year but in our neighborhood, people post for others to come and harvest from their trees for free. So your video just came in really handy. Thank you for sharing.

About 40 years ago my late mother-in-law taught me how to make pie filling by freezing it in the pie dish . I make my apple, peach, and cherry pie fillings like this. Love how easy it is, and how nice it is to have my fillings ready to go. Love your channel

I just ordered the kitchenaid peeler. I had the cowoncus one you were trying to use. I put it up and just hand peeled. I think I will love this; should work for potates too; I hope. I love watching you girl you get er done. Right to the point and don't waste our time or bore us with unnecessary stuff. I'm 74 and you make me so happy. Becky, I make my tomato soup 'concentrate' very thick. I use tomatoes, carrots, onions, celery, and garlic. I cook it the same as you and puree it in my vitamix. The difference is that I do NOT add milk or cream at this point, but pressure can it. With the pressure canning, it is shelf stable, and I can add the milk/cream when I am cooking it. I really enjoy watching your channel and what you are doing in your gardens.

Becky ! You can make apple cider vinegar with the apple peels and core. It's super easy to make. You need a 1 gallon jar . 1 cup of organic sugar brown or white whatever you have. 1 cup of Bragg's apple cider vinegar to Kickstart the process. Water and the peels. Cover it with a cloth and let it sit for a couple weeks.

Hot tip: sourdough starter can be dehydrated and freeze dried so you can make a big batch and then store it in a shelf stable form in a Mason jar

Really? Wow! I had no idea! I love sourdough bread, but I have to be gluten free, and I've never found any gluten free sourdough bread to buy. I haven't had any since my diagnosis, 10 years ago. I am really not doing well at adulting right now, so I know it would be pointless to try to keep starter alive and make my own. But I do have a freeze dryer. Maybe if I didn't have to keep it alive, I could make my own sourdough! Thank you so much for sharing that info! I'm going to look into that.

Freezing the apples in the pie crust is such a great idea! Truly, I learn a lot from watching your videos. Thank you for sharing. Btw, if you ever have leftover crumble topping, you can just freeze it for use another time. I have done that several times and it works out great.

Everything you make looks delicious! I think what you call a crisp we call crumble in the UK. Favourites of mine are apple and rhubarb. Been making homemade bread for 40 years but have not tried this method so just whipped up a batch and you're right I think it took less than 5 min. to prepare, can't wait till tomorrow to bake it and most of all eat it. Thanks Becky, you're the best.

I've done that with my apples! It works great to freeze them in the shape of the final vessel. You may need a little cornstarch to sprinkle on top, before putting the top crust on, because frozen apples seem to release more juice than fresh. Also cut 1/4 cup of butter into small pieces, to place around the apples, before you add the top crust.

A neat trick to wrangling parchment paper into our plates, bowls, etc, is to scrunch it into a tight ball and then unwrap and then it’ll be more malleable.

Becky, I know loose comfy shoes seem like they're more comfortable but I promise, sneakers that you can tighten or loosen with laces are going to give you more support and feel better in the end. My first pregnancy I ended up at a podiatrist because I was wearing slip on squishy shoes. He taped up my feet to show me how I needed to snug up my shoes and it was immediate relief. They don't have to be tight, just a little supportive. Thanks for today's video, I appreciate you!

My sister and I often watch together 😊. She mentioned that you have probably never eaten fried green tomatoes. You have so many in the garden! Another dish you may want to try is potato patties. We use mashed potatoes with diced onions, 1-2 beaten eggs, some self rising flour and extra black pepper… if too thick, add a splash of milk or broth, if too thin, add more flour. Fry in enough oil to cover bottom of skillet. You can add in whatever you’d like. It is great with sweet green peas, chopped hot peppers, or shredded cheese! Never skip the onion! They might even work to top a cottage pie! We have also made fried fritters using okra, corn, onion, hot peppers, egg and flour. We love watching you do everything! Your face is so animated! @@dEEmARIE- it is like shepherds pie, except uses ground beef instead of lamb. Scrambled burger, seasoned to taste, veggies of choice (precooked), top that with creamed corn, then covered with a nice layer of mashed potatoes. Bake to heat through and serve.

Love the idea of prefilling pie shells. I make a ton of jellies and pie fillings when fruit starts to look like it’s going to go bad (I hate food waste!) and this is a great idea. Love your videos!

Love that your videos have so much good general food info that goes along with your food prep and preservation. One thought. If you decide to replace your stove, consider an induction range with an electric oven. You know the advantage of an electric oven but may not be familiar with induction cooking. The two things that I like best about mine is the ability to bring a stock pot full of water to a boil in just a few minutes. The other thing I like is that when the pot or pan is removed from the element the power shuts off and the glass top cools quickly. No open flame or hot electric coil to get burnt on.

I make homemade sandwich bread ALL the time. Saw this and decided to try it. EASY PEASY after it was baked I let completely then sliced it and froze it. I take slice of a time out of the freezer and stick it in the toaster. ALL I hear from my hubby is "boy, this bread is GOOD!" Thanks Becky!!!!

As a matter of fact, even tho we had a 4 burner stove, my mom only used one burner ( lol) My husband asked me when we first married, y I cooked on one burner? I only could say.... don't know. Yesterday I made cinnamon roll apple pie from one of my jars of premade pie filling. The texture was great and the taste was fabulous. I used a combination of granny smith and gala apples because that's what I use to make my apple juice. You can mix equal parts flour and water in a jar and let it sit for 24 to 48 hours. Then use the whole thing to make your bread. Pinch a handful off of your bread dough put it back in the jar add a cup of water and save for your next bread. Keep pinching whenever you make bread. It's fine on the counter for up to 48 hours as long as there is no milk or eggs in the dough. Refrigerator for up to a week

I would love to see more of your organization for keeping up with all of the meals and things you have in your freezers…I think this type of baking and cooking is so relaxing to watch and I love your video format. I like to watch cooking when I don’t feel good and am sick because it reminds me of my grandma and is so comforting. I always love to learn and find this so interesting!

My cherry pitter is suction, and yep doesn't stay stuck. Yes, the attachment to the Kitchenaide is a game changer! Love it! Wish Kitchenaide had an attachment to take the pits out of cherries. I do not like canned pie filling either. Novel way to freeze the filling. I like it - you then don't have your pie dishes in the freezer for months. I peel and core my apples to make applesauce. I put cinnamon in my applesauce and only add sugar if the applesauce lacks flavor. One year it was very blah, so added small amount of sugar and it was fine.

My husband got me one of the kitchenAid attachments also last Christmas and I totally forgot about until I went to find our hand crank peeler/corer to start the apples over the weekend. For the apple pies- you can also put a gallon ziploc bag in the pie dish & fill with the apples & place in the freezer- when frozen just take the filling out of the dish & keep in the freezer. Kimmie @Shes In Her Apron uses this technique, that is where I saw it. I canned some pie filling will be using it this weekend.

Seeing you making these pies reminds me of something that happened several years back. One of the gentleman at work has an apple orchard. He asked me to make some into a Cobbler. I agreed and took the apples home, making the Cobbler that evening. I brought back to work the next morning and left it in the kitchen, and headed off to the airport as I was traveling that day for work. I got a call that afternoon telling me how my Cobbler was a huge hit. That was absolutely the best peach Cobbler they had ever tasted. I said thank you. But I guess I should keep trying harder because that was apple, not peach Cobbler. 🤣

Years ago my husband and I had an apple orchard in Wenatchee with my brother's family. After harvest my SIL and I would make dozens of apple pies for our freezers and we used the same topping you're putting on the crisps to top our pies. Yummy, and we didn't have to make so many crusts.

Omg! When you mentioned fresh nutmeg I was thinking to myself, yeah its amazing. I also had no idea it was an expensive spice, because its so cheap here. Then you mentioned coming to Jamaica and I was like, Ahhhhh Im from Jamaica. There's something about learning that people I watch on youtube have been to my country that makes the relationship built threw videos feel that much closer. Becky I tried something for the first time the other day and I thought as soon as it worked that "I NEED TO TELL BECKY". I was told to put my garlic cloves in very warm but not boiling water and let sit for 5 or so mins and that when you go to peel the skin comes right off. IT WORKS SO GOOD!!!! I peeled 5 full bulbs worth in just a few mins. Thanks for sharing your videos and your life with us.
