Hey guys!!!! I like to scramble (immersion blend) my eggs and put them in the freeze drier raw. I then put them in my food processor after they are done drying making powdered egg and it turns out great!!! This way I can use the eggs in a variety of recipes and I am not limited to their use.

Are you using them this way for baking as well?

Before you put the eggs in the freeze dryer make sure you scramble the eggs real good, mixing the eggs together to the point there is no whites still showing ,then put them in the freeze dryer. After they are done put the freeze dried eggs in a blender and powderize them, then put them in your desired container. Much better product, and mixes with no problems.

I don't know about cooking the eggs first but blending the raw eggs before freeze drying is easier to reconstitute and measure for cooking later.

I just freeze dried 160 eggs. I crack each egg in a glass to check to make sure the egg is good before I dump it into my blinder. I can put about 35 of my medium to small eggs in at a time and blend. I find that that amount of eggs fits comfortably into a tray of my large FDer. I just did a taste test for a group of 5 people using fresh and FDed. They could not tell the difference. By blending while raw you don't get the yolk issue. The FDed onions and bell pepper work great with FDed eggs.

I think most folks meant scramble/whisk the eggs then freeze dry them raw. That is how we prefer to do them anyway.

I run them through a blender to powder them. 2 Tbs. each powder and water = 1 egg. Mix and let sit for 5ish minutes. No taste or texture difference noted

Becky at Acrehomestead scrambled her eggs before placing them in the trays. Once freeze dried, she then zapped them in her blender to powder them. She cooked some up and they looked just like fresh eggs 🥚 😋 🥚

Yes, that is so much easier. The only time I've ever seen anyone actually cook the eggs first was for camping, hiking or traveling. The whole meal including meats and cheese etc, was cooked and reconstituted with hot water so that no ice chest was needed to keep the meal cold.

Was listening, you said a listener said you should cook them first, They actually taste best if you don’t cook them first, best if you mix the raw eggs before putting them on the tray! They don’t taste as good if they’ve been pre-cooked with my experience! I believe once you have it in dry powder form about 1tbs is equivalent to one egg I believe. Love your Videos!💕

I cracked my egg, blended them with my immersion blender, and freeze dried them raw. I think of scrambling as the beating process, not the heating process. Haven’t cooked with mine yet but will be trying them soon.
@gippywhite

Definitely do not scramble them AND cook them before freeze drying them. Scramble them as in just beat them up and get them all one consistency, then freeze dry them. 🥚😉🍳💙💙💙

I find that if I beat the eggs and then freeze them raw, they work the best. I also find that if I scramble them and cook them before freeze drying they seem a little rubbery. So what I think people were trying to say is whisk the eggs before you put them on the trays raw. I also have separated my yokes and egg whites and freeze dried them separately for later to try to make custards or meringues.

I like to mix the raw eggs in my blender, freeze dry them then put back in blender to make powdered eggs. My hens are laying in abundance right now, more than we can eat so freeze drying them helps us save the eggs.

Everyone is saying scramble first. What you do is whisk or blend them well, then freeze dry. That way you can use in other things such as cakes etc.

Hi guys. The way we do our eggs is usually raw and scrambled. This way the eggs are mixed up well. Once fd blitz them in a good processor to a powder consistency. To use or reconstitute we usually just use 2tbs egg powder to 2 tbs water (this is 1 egg). It’s much better doing this raw then cooking the eggs then fd them. We do have both but prefer raw as you have more options when you’re going to cook with them 🙌 But we all know it’s trial and error so awesome work.

I have also seen Becky from Acre Homestead. One of the reasons with prescrambling is they don't have those "clumps" that you were having when rehydrating.

Raw or cooked, depends on how you want to use. But remember if doing raw that freeze drying does not kill pathogens, when reconstituted the pathogen will reactive. So, meat, eggs, or anything else. I did like you mentioned cleaning before changing to a different food. That's very important!

I stumbled upon your video about purple deadnettle, and wandered to this one after you said you were in VA, as I am. What a fun surprise to recognize my friend Brigitte in your video! I saw her and kept thinking, "she looks so much like Brigitte..." and then I heard her speak, and knew it was indeed her. I'm so excited to learn more about you and what you're doing :)

You needed to fully scrabble the eggs before adding them to the FD. Then weigh the trays in grams , after it finished the first session. Write the weight down and return the tray for more drying, that’s about two hours. Re-weigh the trays again. If the weight hasn’t changed. Then everything if fully dry. But if the weight has dropped, then you need to return the tray for more drying, because there is still moisture. Keep drying till the weight stays the same and doesn’t drop.

I usually scramble and pour in the freeze drier raw. I have also done it like this and once it is done, put it in the blender and pulse them up the help break up that yolk. This breaks it down a bit more and seems to help the yolk reconstitute. To reconstitute I do equal parts egg to water, then let it sit for about 5ish minutes, give or take.
