Pressure Canning Brown and Black Rice

Yes! Pressure can rice. This is a tutorial on how easy rice is to pressure can.
Prepare pint jars, lids and rings. Pour 2/3 cup brown or black rice into each pint jar. Add 1 teaspoon of sea salt or canning salt into each jar and fill with filtered water up to an inch below the rim of the jar. Stir each jar to make sure all the air bubbles are out and place lids on jars. Screw rings on finger tight.
Place in pressure canner. When pressure has been reached place regulator on and cook under pressure for 15 minutes. Let cool down naturally.

Ever since I tried canning brown rice I fell in love with your method. Omgoodness I sent this video to friends and family. I feel bad I haven't commented before now. Me and brown rice have a bad and sad history. I've cooked it on the stove but it was never completed done. Finally I baked it and it was completely cooked. That took 3 weeks to get the timing to 1 hour. Flash forward to your video. It's 75° no AC and I figured I would give this a try. I didn't want to turn on my stove. I gave your method a try and boy I couldn't wait to taste it. It was fluffy and completely cooked. Thank you so much for sharing your knowledge and skills. I now buy brown and black rice. This was a game changer in my life. Until next time.

I just got through canning brown rice after watching your video. It turned out beautiful! The only thing I did different, was to use a 1/2 cup of rice instead of 2/3 cup. It comes out of the jar easier because it's not so packed in.

I haven't tried adding some oil/butter, but I wouldn't add too much because there might be a problem of sealing. I say, experiment, and let us know how it comes out! 🥰

I watched video by Homestead Heart and she uses parboiled rice and says it doesn't turn to mush like the others. I glad you did this one because I love brown rice over white. Thanks

i,,m from down under (australia) only 2of us ,& when i cook rice i always cook too much, so this would be so much better for me, just to open a jar. thanks for the video, not too many people cann in australia, i get funny looks when i show friends what i,ve canned, lol

@@dianecooksturges thanks so much for the video on left over rice, just what i need.will be trying this.. my chooks love barley ,cooked on our fire in winter & mixed with grain & molases mix, in summer when fire isn,t going i sprought it till the green is about an inch high, then give that seperate to the grain as it sort of formes a mat. only 4 chooks, so my girls are spoilt. haven,t stopped laying,

I made a very large amount of brown rice as a single ingredient for the home made dog food, I make. And then when we got to the last jar, I realized I never wrote down the exact measurements I used for the recipe that eas a success after failures with using recipes/instructions from other YT'ers. So Im back on YT starting over. And I really think I did do 2/3rds cups like she shows in the video.

It looked like you only put 1/3 cup of black rice into the pint jars. Did I miss the other 1/3 cup? Since that is what you showed I figured that the black rice must expand more than the brown rice.

I make brown rice for my dog food , so the ingredients are not only already cooked, but shelf stable. I'm on my last jar today (going to do a new batch tomorrow) 2-7-2021 and the date on the jar is 11-2-2020 .

New subscriber, I've canned white rice and it comes out solid so I'm going to try with less rice in the jar, and maybe as it's cooling I'll try shaking it up to keep it loose. I'm also going to buy some brown rice and try it as you have. Thanks for your help.

No. I use regular brown rice. Using parboiled rice would make the rice mushy.

Are you doing this under 1,000 ft elevation? Where did you get your estimate for 15 minutes for pints for brown and black rice. Brown rice is usually cooked in a pressure cooker at that elevation for 22 minutes. Also at that elevation Black rice is 8 minutes and forbidden black rice 15 minutes according to the Queen of Pressure Cooking. Also, purple Jasmine is 3-4 minutes.

Yes, here in Columbus, MS we are diffidently under 1,000 ft. about 250 ft. I was just putting up what I do for my area. I find that pressure canning Jasmine rice makes it really mushy, so I only did it once, but see why it would take only 3-4 minutes of canning time.

I have a couple questions that weren't really answered in your video with regards to canning these 2 types of rice 1st I would like to ask what is the measuring amount of black rice that you put into the pint jar? I saw you put 2/3 cup of the Brown rice but he did not say the amount of black race Next I would like to know did you fill up the black rice with water up to the 1st Line? It looks like you did but you did not mention it Also for both kinds of rice you said that you cooked it for 15 minutes did you bring it to 240 pounds of pressure and then cook for 15 minutes? Or did you just put it in there with warm water and actually cook it for 15 minutes? I'm new to canning and I was wondering if rice could be canned cooked and I'm glad to have found your video so thank you I just need to make sure to be correct on this because I can't afford to lose any food because I'm on a very tight budget with 3 men that eat a lot! Also do you use only pints because of your family size? Is it possible to double the amounts and cook them in court size jars? Would I have to add extra time in order to do this? So yes I would like the measurements for each rice and how much water as well as the information on whether you bring it up to pressure and then cook it 15 minutes? How shelf stable is it and have you ever had problems with it not being done at 75 minutes which I understand most courts have to be cook that to be safe from disease and mold I'm building up my pantry because I live in California where food prices are going up but we also have the risk of earthquakes and I need to make sure that I can get food enough for my family that we actually eat and rice is one of those things we actually eat Oh and if you know can this be done with barley? That's something that usually takes a while to cook and I would like to be able to Open a can or jar of pre cooked barley for soups verses getting all that starchiness inside the suit Thank you for your help my email is

I have a huge American canner that can can 14 courts at a time which is brilliant I've only recently heard of water bath canner so I thought I could use a pot lol So next on my list to purchase is a water canner because I would like to make preserves before the end of summer middle of fall In any other recommendations you have I would really appreciate though I am sure you have a lot of other things to do I could really use your help I'm getting tired of canning meat garbanzo beans and black beans haha So thank you for your time and may God-bless you

I just watched a video where they said it was not recommended to pressure can barley - I think they meant barley by itself and nothing else. There may be issues with even heat distribution in the jar and thus not all the possible microbes get destroyed. I think the commercially produced rice, macaroni, and grain canned products, their canners get up to temperature much faster than home canners, and they can cool them down quicker, which makes them safer on canning items that are not recommended for home canners. I think basically you have to do what you think is safe for yourself. I think the heat gets through the product better if you are doing pints or 1/2 pints, as opposed to a quart jar.

We eat rice daily. All the people who can rice (forbidden by the USDA) use parboiled. We eat only organic. Organic parboiled rice is high price. I'd love to simply use not parboiled rices for my pressure canning. Is this possible?

I never use parboiled or white rice (not parboiled) it will turn to mush. I only use black or brown rice regardless of organic. I hope this helps!

@Ms19741979 I haven't tried this process with a water bath. My suggestion would be to boil the jars for 30 mins. Take the hot jars and carefully place them upside down on a towel to cool. Let us know how it goes. Thanks for watching!

I think you want your temperature in the canner before pressure canning and the temperature in your jars to be the same when you begin, either both are hot or both are at room temperature. You do not want to shock your jars with too much of a quick temperature change. I think if you have hot water in your canner and hot water in your jars, it may cut back on the total cooking time. Also do not forget to put in a spacer on the bottom of your canner, I've seen videos where people did not put the jars on a rack or spacer and they moved around and some of them broke in the lady's canning session.

Living Life with a TWIST ... you committed to can at 10 lb pressure but I’m above 1000 feet. I usually can everything at 15 lb pressure. Do you still recommend 10 lb pressure? Also, how long do you think this rice can be stored in this manner?? Up to a year? 1-5 years? Or more??

Yes I have tried canning white rice. It came out mushy. White rice is mostly all starch. The brown and black rice has a lot of fiber and doesn't breakdown into mush.

@@geannfreeman6455 I love her channel . Just a warning though... It was a big fail doing her rice/water ratios. It came out mushy and gross until I increased the rice amount,decreased the water amount and switched to brown rice as well. I ended up doing what this lady does in this video 2/3rds rice, fill to 1/2-1inch head space of water AFTER filling jars with rice. I have done half pints and pints. The pint size seems more error proof.
