Pressure canning corn - raw pack method

We bought fresh sweet corn from a local farmer. Pressure canned it using the raw pack method
Wash & husk corn, remove kernels from the cob. Pack kernels in clean jars, top with hot water, 1” headspace, wipe rim of jars clean, add Forjars canning lids that have been simmered in hot water, adjust rings until finger tight
Process in pressure canner for 55 minutes for pints, if canning quarts 85 minutes

My uncle told me a story from the 40s when the family went from Arkansas to New Mexico for grandpa to cut trees, he was a lumber man. There was a local man who helped and he brought "roasting gears" to help feed my grandpa's family. I'm sure my grandma was glad to get them. But uncle always laughed when remembering "roasting gears"

Barb I would give anything to have some of that northern corn, I now live in Fl. and it's hit or miss to get a decent ear of corn. We use to get white queen corn & it was great, but haven't seen it for years. I miss all the northern produce, it was so much better than what we get down here. Indiana melons are my favorite, & tomatoes Oh for a good tomato!!! I haven't a cantaloupe or watermelon in over three years, not at $4 for a cantaloupe & $9 to $10 for a medium size watermelon if your lucky. Barb enjoy your harvest & eat an extra ear of corn for me! LOL!!! God bless you & your family!

That’s sad to hear. I always thought FL had fresh produce year round. I thought our prices were high! We get our best produce from Colorado

Used to always blanch, cut off the cob then bag & freeze. When pressure canning corn, does the taste & texture resemble frozen (crisp, etc)?

I grew up in Alaska. My Aunt Marge had a garden and one christmas i got to visit. She had froze her and canned her harvest. That was the favorite meal of my life.

Two full-size pickup loads of corn into the freezer the old-fashioned way, oh my! I was in heaven when I found out simply putting it into the freezer was enough! ❤❤

I just put up about a year's worth of salsa...recipe called for waterbath...been so long since I had done that type of canning, I had forgotten where I had stored that big pot! Found it. Whew, I prefer pressure canning! Heating that amount of water just seems wasteful.

I totally agree with you about pressure canning! Last fall I watched a video where a lady used her pressure canner to 'steam can' anything that would normally be hot water bathed. I've been doing that this summer & I absolutely love it!! The video was from "Out The Back Door". Not nearly as much water, thus not all the weight & MUCH quicker because you're not waiting for all that water to boil!! God bless!

I finally got a waterbath pot that allows steam canning. Love it, same amount of time, but fraction of the water heats to processing more quickly. Just plain easier.

Ooh the memories are flooding back. Not much better than a fresh cup of blanched corn, it's sweet like candy. I hated shocking corn. I hated shocking corn. It's nasty work when the hairs cling to your sweet body. I had forgotten about the leaf cuts.

😂. This makes me laugh. You have those fond memories too 😂. And if it was muddy, you’d sink it up past your ankles, trying to pull your boots out of the mud, getting smacked but corn stalks & leaves. Praying you don’t fall in the mud. The roots on each stalk would poke your feet 😂😂 Shall I go on? Oh the memories 😂
