I'm in my late 50's and you remind me so much of my grandmother! She grew up in the depression and she taught me so many things. You are a wonderful teacher, thank you! If it hadn't been for you I would never have tried canning with a pressure canner. 💖

I just canned up 5 quarts of this in my electric Nesco Smart Canner!! I forgot to add the dehydrated onions… One jar was questionable if it was going to seal, and it was dinnertime so I opened that jar, thickened the juice with cornstarch while reheating and made myself a pulled pork sandwich with fresh onion. Delicious! I had no smoked paprika so I mixed in a dash of liquid smoke when stirring in the bbq sauce. 1 pint has plenty left over after my meal for my husband when he is ready to eat dinner (he’s working late). We greatly appreciate these easy meals. Thank you!

I'm so grateful for your recipes and videos. I am 50 years old and brand new to canning. It scared me because the idea of possibly harming any member of my family gave me fear. But with the economy being what it is I had to face my fear and learn to can. Your videos are so informative and I have faced my fear and you have such a variety of foods. God bless you.

This is 5 years after original filming. I just recently found your RU-vid Channel. Thank you for all of the work you both do to prepare and present these episodes. I recently heard cold food, cold jars, cold canner. Hot food, hot jars, hot canner. Is that for WB canning and not PC? Thanks and have a blessed day.

Pulled pork is a big deal here in the south where l grew up and live,l dont like mine greasy and fatty or swimming in sauce l have one local BBQ place l love ,l get meat there or put a pork loin in my crockpot ,my favorite meat next to prime rib.Thank you for teaching me how to can the right way. You are an awesome educator.

i make regular pulled pork a few times a year, and watched another video on canning it. But have never tried it. This one looks so good that i think i will try this way. I use a rub which i mix myself so will go with that one. I love this, so easy and i bet delicious. i can't wait to go to town again to buy a whole front shoulder so i can whip some of this up. I love putting pulled pork on top of homemade mac and cheese and sometimes when i make white bread buns, i stuff a little of the mixture inside the dough before i bake them. They are so yummy. Thank you for a great video. .

Thank you for another great tutorial. I think I'm going to make a similar recipe with chicken chunks, dry rub and chili peppers. We aren't fans of sweet bar b que sauce. I had to laugh at your reaction while loading the canner...you kept saying 10 in the house, while I'm counting 11 on the video. A bonus jar is always a blessing.

I’ve followed this recipe twice and have enough prepped pork that I’m about to do it again! We love your pulled pork recipe! I can it in wide-mouth pint sized jars and that makes just enough, per meal, for me and my husband. We eat it on top of baked potatoes with sour cream and chopped green onions! Yum!

What is the brand name of the smoked paprika? I tried to see it many ways but my old eyes just couldn’t read the can. Just love you channel. So very proud of the common sense and intelligence you promote for women. Far to many flaky women today.

Oh my goodness this is good! I made it like you said except that I had "Sweet Baby Rays" Barbecue sauce. Only because we don't do Costco, but Sam's Club. I got so much pork and put up about 16 quart jars. Used one for tasting, and put over rice. I loved it so much that I am thinking of doing some more canning of this recipe. Thank you for sharing and teaching us the in's and out's of canning. Thinking of doing a bag meal for my son with this recipe.

I made a BUNCH of pulled pork today. Some is going to a funeral and I plan to can the rest. I put the juice in the fridge and will be able to lift the fat off tomorrow, which I plan to use with the pork. I also use the smoked chipotle peppers in adobo sauce and I usually use Dr. Pepper but I had Coke so that’s what I used. I hope my meat doesn’t come out over done and dry...I’m just starting my pressure canning journey. Just found your channel and love it!

We buy our pork shoulder from Costco also and I sliced them like pork chops. Well I have no idea how to cook them without being tough. This is a perfect solution to make them tender and make room in the freezer.

I made this today!! Modified it a tiny bit just for the seasoning and bbq sauce to make it sugar free. My husband is diabetic and I try to make our meals sugar free if possible. I used Rib & Rack Sugar Free BBQ Rub and G Hughes Sugar Free Smokehouse Carolina Style BBQ Sauce. Excited to try it out for dinner!! Thank you so much for always giving me great recipe ideas!!! I love your channel!

Pam, I know this video is 3 years old now but I always through the rule of thumb was as follows: Cold jars, cold ingredients go into a cold canner. Hot jars, hot ingredients go into a hot canner. This rule helps cut down on thermal shock and decreases jar breakage.

I have stone countertops too and I dislike the sound and never put a jar down on the naked counter. I’ve found that putting down one of the “puppy” training pads (from Costco) is very convenient. When I use one just to drain washed vegetables, I hang it through the handle on an oven to dry out a bit then I am able to use it again to contain a mess - like I’d have if I were putting up pulled pork. You can’t imagine the mess I just had tonight when you inspired me to drag out the 40 lbs of frozen cherries to turn into pie filling. I’ve had to mop the floors twice already. But the jars are so beautiful.

Another great and instructive video. I usually use a North Carolina pulled pork that is apple cider vinegar based. Because of the acid in the vinegar, I was wondering what changes are necessary to pressure can this food. Perhaps I should cook the pork first rather than a raw pack? I am wanting to do this with vinegar based sauce as well (Eastern NC gal too). I personally don't think cooking first would be necessary, but I was concerned with the amount of sauce. I am concerned that it would give a pickled tasted to the pork. So I'm going to use dry rub and use less sauce.

I love your teaching on Canning, you are the best! You say your canned goods are "outside". I believe you live in a very warm state, right? How do you keep your home canned goods cool in the summer? I live in Arkansas, so it gets quite hot here. I have a shed outside that I would like to store my canned goods in, but I am afraid of the heat in the summer! I was just wondering what you do about this! Lana

Our food is in our garage and it is not ideal. We add a space heater in the winter to keep it above freezing, but in the summer it gets hot--mid to upper 90s. There is the ideal that is listed in most references, and then there is the reality that most people have to deal with. We just live with it and keep rotating our food.

Pam, I got such a great deal at the grocery store on pork butt - buy one get one free. I notice you aren’t leaving much headspace. But I figure you know what you’re doing 😉 This is my plan for my Thursday canning project, since Las Vegas forecast is a high of 68. May 4! Highly unusual, and also the sell by date for the pork. Thanks for this idea ❤️

I just wanted to let you know that I ended up with 4 half pints and 6 pints. One of the half pints didn't seal so I had it for supper. Oh, my! It was so good! My usual way to make pulled pork was to take it to my brother's for him to smoke, then cook in the slow cooker for a few hours, *then shred and freeze. This is much easier and doesn't require traveling for two hours. Thanks so much for sharing your recipe.

Found the paprika; thank you. I have s question. I have a ward cookbook with a recipe called Cafe Rio at Home but it calls for a can of Coke as one of the ingredients; I would assume that you would need to simmer the plain bottled pork after opening and not try to bottle the pork with the Coke, sugar and salsa; does that sound reasonable to you? Also, many years ago I used to make trips to Moroni to pick up cases of turkey scapula for my church group to pressure can; sadly they found a market for the scapula and it hasn't been available but it was sure easy to work with and delicious. Thank you so much for all you and Jim do to encourage us to be more self-sufficient.

Would you recommend pressure canning this pulled pork recipe in the Nesco pressure canner? I just bought it after watching your comparison video on the meat sauce. It looks so much easier to use than the stove top presto canner. I want to pressure can ready meals in the nesco canner for ease, but I’m not sure which recipes are safe in the nesco or if they must be done in the presto stove top. If this isn’t safe in the nesco, do you recommend any meals with meat that are safe in it? I love you’re videos, you are the Walter White of canning.

Hi Pam, I just watch another video of yours (spicy pork chunks); where you 'browned' the pork in advance. Have you found (with all your years of experience) that the texture of the meat is better with raw pack or no? Thanks...you and Jim are awesome!

I’m new at canning and stumbled onto your channel, and greatly enjoying it. I canned this pulled pork, however I filled the jars too full and my jars siphoned. 5 out of 6 jars sealed, and we will be using the one that didn’t for tomorrow’s dinner. My question is this….in the other 5 jars (quarts) the liquid level is now below some of the pork chunks. Is this a problem? Thanks

My future husband is from the south and he loves barbeque pork. I will have to do them in quart jars, for him. Looks so good. Do you do all your canning (pressure) outside?

Hi Kim, Pam's stove is an induction stove and her canner isn't an induction canner, hence canning outdoors. I'm thinking an outdoor canning space is actually a nice idea regardless.

Did you put cold jars in hot water? Can I put cold food in cold jars and put in cold water in the canner and then turn on the stove? Or must it all be hot? Hot food, hot jars, hot water in canner?

I have looked in my 3 Ball books and googled and can't find if it is safe to raw pack pork cubes with Soy Sauce instead of barbecue sauce. Have you any idea? I also will definitely make your recipe as presented...it looks delicious! Thanks for all your videos!

I made pulled pork last week in the canner. I snuck in some Of the chili in adobo sauce that you recommended in your chicken recipe. It smelled divine. Five of my pints canned beautifully but the top blew off of one. Which was fine my son and husband just ate that for dinner that night and they loved it. I can only assume that I must have put the lid on too tightly and it was not able to vent. At least that’s what I’m guessing. Anyway wonderful recipe thanks so much.

Miss Pam, LOVED this video on pulled pork/raw pack canning. Question for you, what brand of pressure canner do you have???? It does not look like a Presto nor an American canner. I think yours looks easy enough to use, and I LOVE that you can double stack your cans. Appreciate ALL yours and your husbands efforts in making these videos!!!!!--

Pork butt is part of the shoulder, and she is using the shoulder in the video, so yes.

Question, I see that you don't leave a 1 inch head space in these. Is that because you are canning the meat raw? This looks like something I want to do and I really appreciate the great instructions.

I am sorry to say that sometimes I get careless about head space! I am trying to set a better example in our videos. You will want to leave about 1 inch of head space with this recipe.

It looks like you have your jars really full but do you not need to leave 1" headspace? Or is it different for meat since it shrinks?

Rice A Roni makes a long grain and wild rice dish that calls for 1 tablespoon of butter and 1 2/3 cups of water. Simmer 25-30 minutes. A little faster cooking time.

To be safe, I would add the sauce after I open the jars instead of canning it with the meat unless you can find a tested recipe that allows that. Great question! Thanks.

When you begin canning your pork shoulder, how much of the fat do you trim off before cubing and canning? I smoke pork shoulder quite often and I tend to trim quite a bit. I was curious as to how much fat you leave on. I love your videos and my wife and I watch your videos before everything we pressure can. I’ve got my mom watching your videos now too!

Thanks, James. We appreciate your support. I trim all the fat I can off the meat. Fat impedes heat transfer. There will still be some in the jar after processing no matter how much I think I have trimmed off.

I’m a new viewer and I love your shows. Thanks for sharing with us. I used your recipe but instead of canning pork shoulder I used beautiful pork chops from Costco. The canned shredded pork turned out very very dry. Is that because of the type of pork I used?

If the pork produces its own liquid, it seems that proper head space would be important. Also, I do not have dehydrated onion so can I use fresh or minced onions? Thanks again

My mother canned all her life. (She was known for her beautiful garden and she fed her 10 kids and neighbors very well :) My mother passed years ago and I have a canning question, I notice that in some videos...you really "stuff" your jars as she did..., well pass the one inch head space. “What is the reason for the one inch head space?” Thank You for "All" of your videos! I can hear my mother saying “I told you so..," I was the kid who would "never garden and saw no "need" for canning." I did however roll up my sleeves... when I came home from college and help harvest, cook and prep the food for storage. I thought canning, gardening and sewing was “All Unnecessary”… “We are not in the Depression"…”We have "Supermarket and Megamarkets!” LOL..

Thanks for your story! The reason for head space is that when heated, food can expand, so you want to give it room. I've been canning so long that I know which foods I can stuff and which I can't. However, it is best to leave an inch if you are not sure.

Hello Pam, I would like to incorporate a pork loin with pork shoulder to free up freezer space, also I plan to can in quart jars because I have quite a bit of shoulder. What are your thoughts on using a little loin? My thinking I would use 3 lbs. shoulder to 1 lb. loin. Thanks again, you are amazing! Of course so is Jim, you look so happy!

I used to own a BBQ restaurant and usually Smoke 6 pork Butts at a time for home use. I then shred it. I then get my vacuum sealer out and make up several bags of the pulled pork and then freeze it. When we want some BBQ we take a bag and drop it in hot boiling water for a few minutes and it is ready to eat. My question is what do you think if I used my cooked pulled pork instead of the raw pack?

That sounds fantastic--my mouth is watering. You would need to pressure can it. What would you use for the liquid? Broth would work. Not sure you would want to use water--it might dilute the taste. It is worth a try to see how you like it.

I have two questions. You use an outdoor gas cooktop…..my Presto canner says you cannot use those…my outdoor two burners gas cooktop is what I need to use. Also my rings are lose after canning, I even tightened them more this last time and they were loose….is this ok. My lids do not pop that I know but they are sealed. I even waited five days before storing them. Check out the Pinterest Meals in A Jar…some really good recipes that you can put up in a jar, they use freeze dried products but I’m using dehydrated …wish I could find a reasonably priced freeze drier… Can you can lunch meats?
