Raspberry Pistachio Tea Cake
Ingredients:
175 grams soft butter
150 grams white sugar
2 large eggs
50 grams plain Greek yogurt
225 grams white flour
120 grams fresh raspberries
60 grams chopped raw pistachios
Instructions:
Preparation:
Preheat the oven to 170 degrees Celsius (338 degrees Fahrenheit).
Line a cake pan with parchment paper.
Mixing the Batter:
In a large bowl, cream together the soft butter and white sugar using an electric mixer until light and fluffy, about 2-3 minutes.
Add the eggs and plain Greek yogurt to the butter mixture. Mix again until smooth and well combined.
Incorporating Dry Ingredients:
Gradually add the white flour to the batter, mixing gently with a spatula until just combined.
Carefully fold in the fresh raspberries and chopped pistachios until evenly distributed in the batter.
Baking:
Transfer the batter into the prepared cake pan, spreading it evenly with a spatula.
Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving:
Allow the cake to cool in the pan for 15 minutes.
Carefully remove the cake from the pan by lifting it out using the parchment paper.
Let the cake cool completely on a wire rack.
