I know I'm a little late to the party but I've been thinking about doing a prime rib this Christmas so I started watching some videos about it and out of the 5 or 6 I've watched so far, yours is by far the best looking one. Nice bark and beautiful med rare meat. Perfect cook by the looks of it.
I watch all of your videos. I could not find a really good prime rib video for the Weber last weekend for Christmas. Not always convenient to fire up the stick burner for a 4 bone prime rib roast. Wish I had this a few days ago.
Watching Chud de-ice the Kettle reminds me why I left Northern Minnesota. 😄 Wifey got me a Weber Kettle for Christmas. I was planning on smoking the New Year's Prime Rib. But I may have to try break in the Kettle on it instead.

I smoked one on Christmas Eve with an herb butter. Turned out decent. Cleanly smoked, nice crust, medium rare, juicy, tender. My only knock would be that it was kind of bland. I did not dry brine, but looking back, I realize that I should have.
It was cold as hell here in nh on Christmas and the freezing rain sucked but it does make temp control easy. Hope your holiday was good, love the family videos.
A belated Merry Christmas and Happy New Year! I smoked a Wagu Prime Rib for Christmas dinner too... $212 later... it was fantastic! (although not being a pitmaster, I was "concerned"). But for the rest of us in Texas, thanks for bringing the cold weather back with you from NH! As long as I don't have to chip ice from my smoker, I'll tolerate it though! :)

I like taking my prime Rib and slicing it about 5/4 thick...then grilling it about 90 seconds on each side...my wife and I both like the texture and flavor a little better this way.

Looked great. Happy holidays. I saw you had the weber top vent over your fire instead of over your meat. Do normally cook like that when your on a kettle or have you noticed the vent directly above the fire helps reduce the temps on the “cool side”?
