If i'm not mistaken, this butter chicken with Maunika was filmed a long time ago and Jamie's version was during the pandemic so he did know how to do it but decided to change it anyway.

Chickpea flour is common in Indian households and is used as a thickener for the thin yogurt here. It also helps in sticking the marinade evenly and also it will get slightly crisp crust when made into tikkas.

Wow.. ok, so in a way its used almost like corn starch or general pourpose flour in western food ? I have seen chickpea flour in markets but with what I am comfortable making I just use chickpeas.. they are fantastic ! Something new to try , excellent 🙂

@@razor6888 yes picked it correct, but be informed that while cornstarch or gp flour is neutral in taste, chickpea flour will have a flavor. And that flavor works with most indian dishes, that's why it's used here so much.

Usually in India stuff like butter chicken is served with raw onion rings , lemon and few green chillies , so that it can be customised to your liking.

Hi James! Well as you were asking for the lemon juice. Well when I am plating a dish like butter chicken, I would drizzle a little lemon juice for extra tang and freshness. If not then, then I'll add a little while caramelising my onion base. I wouldn't prefer squeezing in lemon juice like Jamie did. Also, another quick tip for the readers: it's very important to control the quantity of lemon juice especially if you add it while caramelising onions like me, because you just want a little acidic essence to it. It shouldn't spoil or overpower anything. As for the kewra water, that is fine if you're not heating it in any way. Honey should be added only after adding the chicken thighs so that it cooks for less than half a minute or so. It should cook a little but honey will get toxic if cooked for longer time. These are just some cooking techniques I follow. Thank you for reading guys!

Heating up honey doesn't make it toxic. I had never even *heard* of that concept before this video, so I did some research, and this belief is a myth. Heating honey can't make it toxic. You can degrade the honey and reduce the vitamins etc. if you heat it up past body temperature, but it won't become harmful.

Honey doesn't get toxic if heated up. That's actually an exaggerated myth. Honey does change it's chemical components when heated up however like enzymes, protein structure, vitamins etc. They do get destroyed when heated up. This is why honey doesn't turn toxic when pastuerized and sold in jars (not fresh honey) however those manufacturers specifically add external vitamin in them. It does make honey less beneficial as fresh honey would, and that's why pasteurized honey is not prefered to than fresh honey, however it doesn't make it poisonous or detrimental to health.

Yes, honey looses vitamins and every other health stuff when heating over 80 degrees Celsius but not sugar nor taste and it's not toxic in any way unless you burn it to black. So I confirm Miles Moralis comment.

It does look good doesn't it! The kashmiri chilli is especially preferred for the colour and is believed to be less hotter than other Indian chillies (check this!). At my place we do add lemon to gravies, but only after it's off the stove or just before serving so that there's no bitterness.

i m an indian chef working at 5* hotel. lemon is just personal taste it brings slight tang but its not compolsary. kevra water is something like rose water its give a flower fragrence mostly used in indian desserts like kheer

I’m not a professional chef, but my mom was, and she always said that the squeeze of citrus was added to balance the richness of these dishes, but could also have been added because at least the northern Indian palette likes extra acidity and sour flavors

Personally never saw anyone add lemon juice to a butter chicken, at least in the end. I've seen some add it in the chicken marinate though. Also chickpea flour is great in such marination (chicken tikka and tandoori) as it holds all the spices and everything extra well together!

It actually makes some sense. When I have tandoori chicken (grilled), I love a fresh squeeze of lemon. They made tandoori chicken... and then, they added the lemon to add the brightness and acidity. The acid really adds something to such a rich dish.

In home cooking, many times we do squeeze a bit of lemon at the end. But it's a household preference. I personally like it almost all savory gravies. Generally it is avoided in sweeter gravies that are cashew heavy.

@@Jamiiemac Nope! I live in an American suburb and there’s a few here and there but mostly the usual fast food, sit down restaurants, some Japanese, Mexican, and Chinese places. We really only got a few Korean places recently and I just heard of this one Indian place. I’m sure if I went now towards the city there would be more options though.

@@chrissolace aw that’s annoying, here in the uk, you will find either sit in or takeaway Indian food in basically every village, town or city. And you’ll very commonly have several choices, even my town in Scotland of 6k people has 3 separate, independent ones. Another town nearly of like 50k people probably had around 10-15 hahaha

We sometimes add lemon juice (just a little) to somewhat cut through the richness or heat of a dish, with thicker fattier gravies like this the lemon adds a little acidity and freshness, adding some fresh coriander or thinly sliced fresh ginger or garlic is also pretty common! Most of the time though when serving up a gravy like this we place the "add-ons" (lemon slices, ginger, garlic, more coriander, more sliced green chilies) separately so guests can adjust the flavour to their liking.

From the tests I've seen, marinades don't really penetrate the meat, even with more time, but with more time it does make the surface of the meat more tender, since it has salt to draw out the moisture and acidic stuff life vinegar, yogurt, lemon juice etc. that tenderize meat on their own.

In india we cosider Kashmiri chillies to have no heat and are only used to add colour. Dried local red chillies are used for heat and are marketed as red chilli powder everywhere.

I like the idea of adding a little kewra or lemon or coriander, basically anything with a fresh flavor to balance out the strong spicy masala flavor, it'll probably make the flavors more rounded. Personally, I really like when it's garnished with more fresh cream, which isn't mixed in and so in between the spicy hit, you'll get that cream sometimes and I love that

Chickpea flour is used to thicken the curd as , we regullarly use home set curds and it is not very thick like hung or greek yogurt.

Jamie Oliver and his chilli jam. In India we say channa flour and egg plant we say brinjal and with chillies we have from the North East of India which is called ghost chillies or bhutt jolokia which is so so hot and spicy.

You mentioned it being a good idea to not wear rings for hygienic reasons, but it's also a good idea for safety reasons. It's possible for them to get caught on things if you work with your hands. I guess it's not as big of a concern in cooking, but I used to be an automotive mechanic and wearing rings was highly discouraged. There was a TV show called Servant on Apple TV+, and on Season 3 Episode 4 a chef was cooking, she slipped and fell, but her ring got caught on a hook, and her finger came off.

I've seen many different ingredients being added to an Indian dish, depending on the chef. For the most part, it depends on which region the chef hails from (or their teacher hailed from). I know four guys, and they all use different spice blends and different ratios for the same dish.

By my personal opinion kewra water adds a complete different extra flavour to it - I wouldn’t compare adding lemon juice with adding kewra (which is really flowery in taste also in smell more like a taste-able parfum).

Kewera water is pandan family flowers and leaf essence nothing to do with acid of lemon. She simplifies it for home making.

We Indians sometimes use chickpea flour to thicken curry or gravy. Sometimes we also use corn flour for this. But I have never used them. If I need a thicker curry or gravy, I use a separate bowl mixing curd, minced onion well. And if the gravy is to be made dark red, then tomato puree (homemade of course) and Kashmiri chilli powder with a little sugar are used.

kewra water is comes from a fruit called kewra and its super sour and with fragrant.... so using it for cooking few drops of it as same sour as a tea spoon of lime juice

Chickpea Flour or Besan is commonly used in Indian Cooking as it helps the Marinade stick. Normally I prefer Roasting it a little and then add it.

Adding lemon juice at the end comes from street food. Often garnish is precut on street food trucks (‘lahri’) and adding lemon at the end gives it some freshness. Personally at home I don’t add it to my dishes

Lemon juice is an option when it's a dish loaded with butter and cream so as to cut the fat especially when your making the butter chicken without fresh tomatoes they only used a paste which tends to be on the sweeter side most fresh tomatoes in india are on the tangier side so the lime juice is never used but if you are using sweeter tomatoes then like juice is needed as an acid to cut through the richness and fattiness of the dish

I like a dash of vinegar in heavy soups and stews, or sometimes lemon. It seems to brighten up the rest of the flavors and keep the palate more able to taste them, like when you have one strong flavor trying to take over the whole dish and make everything taste the same. Great with things like lentil soup.

This recipe I think is a little more doable for cooking at home. If we adapt one of the methods from the previous videos regarding the smokiness you can get a similar product.

I am still trying to perfect my butter chicken, it is a difficult process. One recipe I have found, from an Indian chef, calls for no onions. I still added the onions because I like them, but it is food for thought.

Different names for the same things: In Germany it is also Zucchini (or Sommerkürbis => summer-pumpkin). In Swiss German we call it Zucchetti, derived from a North-Italian or Venetian dialect.

you add toasted chickpea flour to chicken tikka marinate it give a nice coating and the coating doesnt fall of the meat kinda like a hack

I havent googled it yet or anything but i really dont think that honey will get toxic or poisonous when you heat it up. I never really cooked with it so it was never exposed to heat for a long time but i use a mix of honey and orange juice as a glaze for when Im making a roasted duck in the oven to caramelize for like 5 Minutes or maybe a little longer. I really like this channel. I think you are a great teacher. I already learned a lot and you also made me interested to try dig in to spanish cuisine one day. Hi James. Month 5 of my journey to becoming a chef. I have amazing news. Tomorrow our Sous Chef is on vacation for a week, and I am filling in for him during service! I will be working directly under the Head Chef. I know I am only getting this opportunity to because we run a small team (the other apprentice and I handle the the larder and desert stations, the head and sous chef do everything else), but I am as scared as I am excited. The responsibility also means that I'll be expediting tickets and coordinating with service staff. So glad I left my office job behind and began this journey. And your videos are very much a big influence in this decision. Wish me luck!

Monica added green chillies to the marinade & sauce & lime at the end.. that’s not traditional. It would be quite hot & tangy.. traditionally, it smoky, creamy, unami & slightly sweet & tangy (from the tomatoes)

Lemon is added so in chance the dish have more salt it dilute it and also make it a bit sour taste for fun Cause spice and sour is a great combo And yes she did home stile the ingredients commen in Indian house are used 🙃

I think lemon is added if it is a spicy dish like chicken curry or chicken tikka masala or chicken biryani to give it added zing mostly in regional (Maharashtrian/kolhapuri) chicken dishes but saw it first in butter chicken today. Butter chicken has a more sweet taste and isn't that spicy so idk what difference lemon makes. I know a lot of butter is added though in butter chicken. Lemon and curd is commonly mixed in for the chicken marinade at beginning along with other spices.

When I first made butter chicken, I simplified the recipe by using a pre-made tandoori masala on the chicken. It did make it easier.

1 - Kewra pronunication 9.9999999/10- I am proud of you. Highly impressed!! 2 - Lemon juice-Yes, please!! Usually people put few drops on their portions right before they start eating. I won't put it in the whole pan. Plus, butter chicken shouldn't have any sugar/ honey/ sweet stuff. Come to New Delhi, we'll have some good ones.

Without onion, direct on butter cariander powder will start burn.. they should mix coriander powder with crreaam or curd first..

Another couple common food name differences are (for anyone interested): UK/US Rocket / Arugula Coriander / Cilantro Biscuit / Cookie Scone / Biscuit (I think techincally different but very similar?) Spring Onions / Green Onions Jam / Jelly Jelly / Jello Fizzy Drink / Soda or Pop :)

Here in the US I’ve heard both spring/green onions and jam/jelly. Pop is more of a Canadian thing, I think also used in midwestern states along the border. People sometimes combine soda and pop into soda pop, but that’s generally only used by people who say pop.

Little correction, heating up honey will *NEVER* turn it toxic to discernible levels for a human. Sure heating or long-term fermentation can raise Hydroxymethylfurfural levels that can become dangerous to the bees themselves but a human would have to eat ridiculous amounts to get to that point. To give you an analogy, apple seeds contain cyanide but in such minuscule quantities you would have to eat impossible amounts of apples or down a bag of pure seeds for it to become dangerous.

There's no chickpea flour in the marinade in butter chicken. Nor is lemon added to it. Kewra water rather adds a lovely flavour to it.

I’ve professionally made dozens of buckets of this sauce. I have an open mind here. Regarding the chickpea flour to the marinade, though it does nothing for tenderizing. I’d offer that I believe chickpeas have a rather nutty “chicken like” meaty flavor once cooked. Perhaps the final product still benefits from that. Hell, I use soaked cashew butter in my gravy so don’t see a conflict, my main concern would be smoothness, even thoroughly cooked chickpea flour can be grainy, I like my butter chicken to be like velvet! As a wildcard here, with that particular marinade, there is often a lot of bleeding of the meat juices (weeping) and separation. If it was marinated overnight, the legume powder could somehow be kind of a catcher and absorb these liquids… Unsure. However, they put it on on skewers and cooked right away. My nearest assumption is it played as a binder to keep it to the chicken a little more for that particular cooking process. All in all, I don’t think the end result would really suffer tbh… I just wouldn’t use too much.

Lemon can be a personal choice but I do not add it when cooking at home. The sourness is recieved from the tomoto. Good dish made. I also add cream at a much later stage and also the onion and tomoto concortion is puried and sieved as chef Brar did. Keep up the good work. Cheers. I am from Punjab , India.

James, I don't know if you'll read this, but degi mirch is spicy red chilly powder, whereas kashmiri lal mirch is mild spice, which is added mostly for colour.
