One of the reasons I enjoy your channel is that I feel as though we have similar relationships to the art and the craft of cooking. This was one of those videos, because I too felt the same envy of these guys, and the same wish to be right there with them. Great video chef, one of your best in my opinion, and honestly I would suggest that maybe you should do something like this, perhaps a big outdoor Paella? and do a video of it.

Village cooking channel is hands down one of the best things on the internet !!!! They make some truly amazing meals, and have such energy and spirit. I would be willing to pay a lot of money to cook with just for the xperience !!!! The fact that they provide meals for the disadvantaged in their village , really makes them a world treasure.

These guys feed the needy with absolutely no sort of social care or pension in place.. mostly people abandoned by their own kin due to old age

That's what happened, some movies paid them to appear in the movies where there's a party scene which involves cooking and catering. In those scene these guys shout and give the same intro with the same high energy.

11:51 Tamil Translation: Cooking Parboiled biryani stuffed in a whole lamb which is cooked completely by steaming and dumping the biriyani and eating biryani along with ripping the lamb meat feels like Mandi rice (Lebanese dish. It is ultimate and whole lamb done eating. Raw translation I couldn't put my words like their high energetic way

This dish exists in many versions across large portions of Africa, the Mediterranean, the Middle East and into large parts of what is now the Baltic's, Central Europe, china and Russia. Historically this dish was enjoyed by the Mongols, the Persians, the Macedonians, the Cossacks and the Kazaks, the Byzantines, the Mughlai..... I doubt it's possible to determine who made it first but every major power since the fall of Rome has been cooking variants of this dish, it spread to every corner of the earth, if it only had rice and meat, there is a pilau or a biryani or a Mandi.... This is arguably one of the most important and influential meals in human history, up there in cultural significance with things as essential as 'bread' is to more northern cultures. If these men are tamils in Srilanka, I can tell you I ate essentially the same dish prepared in Morocco, clear across two continents away, and honestly even the spice mix was similar, both being after all historically part of the great trade routes of antiquity.

@@charlesparr1611 Eating a goop of everything thrown in to pantry into a pot including rice is not actually you'd call a dish. But Etymologically, The word Biryani from Persia which means Rice plate. And, these people are from South India, Tamil Nadu.

My grandchildren love to watch this channel and as young as they are (9 & 7) , they appreciate the dishes and tell me which ones they watch all the time! They particularly love the 'grinder'( no pun intended!😂) and also love to see the old folks, orphans enjoying the food at the end of the video! The food handling is very clean! God bless these guys !❤

As a Filipino, with many bananas here in our country. Eating "on" banana leaves is very satisfying, one time when I was in elementary school, I asked my mother to wrap my rice with banana leaves inside the Packed lunch box. When I open it, THE SMELL IS MARVELOUS :) Preparing the banana leaves requires heating/fire, before using it.

@@AgraxGaming it is best to undergo a quick pass over a fire. It has two purpose, make better smell for food and clean. If it is not pass over a fire, there is no smell and it is not clean.

these Indian cooking channels (another famous one is Grandpa Kitchen) sometimes their recipes can be way off, but their intention of cooking (mostly for feeding the needy/poor/orphans) is very noble and should be protected from these recipe critics (Uncle Roger included), some things should be left as it is. EDIT: for the interest of the tambis who see this comment "sometimes their recipes can be way off" is mostly referring to the non Indian recipes they featured sometimes/occasionally, hence my original point is recipe originality is not the main point but the true purpose they making it in the first place, which is to feed the orphans/needy which is a very noble deed and I stand by that.

@@ChefJamesMakinson true that, I cant remember which exact older videos but I saw few of these "experts" diss their recipes, "this is not how its traditionally made" "they cooking it this way is not right", not many, but there are few in between which is sad to see. they are just making foods for good deeds and I'm glad u put them in a good light unlike those (censored).

Although I do feel some criticism is still valid at points!! Also I was about to recommend that channel!! Great channel!!, it’s sad that the original grandpa host is no longer there; and the crew is now honoring him by continuing his work!!

I dont there is such a thing as a rigid recipe for indian cooking. From what ive experienced cooking concepts there are very essentialist and varied as their culture is.

I’m so glad you reviewed the Village Cooking channel. I love to watch their beautiful videos, since they seem to live in paradise. I believe the father used to be a professional chef, and now he and his family cook so they can feed the residents of various homes for the elderly/incapacitated. I love their enthusiasm and the joy they show on all their videos. Like you, I often wish I could taste some of their dishes! You did a great job of breaking down and explaining what was happening. Mister Makinson, in lieu of recent events with a certain reactor, I really appreciate your content. You don’t take up a giant portion of the screen, and your commentary is relevant and concise. The green “sauce” at the end is most likely a gravy or “salan” as it’s called - usually made from chillies and might use a protein like chicken or mutton. It complements biryani really well!

Kootu consists of pulses and sometimes coconut paste... Salan or (Salna as it is called in some places) is more tomato heavy😊

10:43 Chef!! That green sauce is dalcha (Aubergine and Dal curry) traditionally served with some types of biryani around Tamil Nadu in India. Most probably this dalcha has been flavoured with lamb.

@@aidi58 My family or my region only have Dalcha along with ghee rice(white pilaf made with coconut milk and carrots and peas). For biryani like these definitely a good curry & raitha and definitely some fish fry

Glad you took the time to review this channel and these guys are truly awesome. The green chutney is actually a masala gravy with possibly the offals from the goats. In the end, he is just summarizing the cooking process that they did and also described just how great it tasted. In addition to making truly authentic cooking videos, they also give back a lot to the community especially for the elderly who have been abandoned. All the best to you. Loved the way you managed the commentary for the video.

Great video. I am South African and we do a lot of cooking at the fire place especially potjie kos which is a vegetable and meat stew cooked in a cast iron pot on the fire.. There are many varieties of this meal done with lamb, beef. chicken and seafood. Served with homemade and baked on the fire bread. Many other meals from soup to puddings are done on the fire. The green stuff is the gravy that is usually made as a side dish. Raita (Yogurt with onions, carrots, coriander leaves) is also served with biryani

OMG This video is literally making my mouth water. I can almost imagine how beautifully fragrant all those spices are. The meat is literally falling off the bone. The green color sauce is called DALCHA. In some parts of south India thay use to serve it with briyani. Its made up of dal,brinjal,green chilli, mutton bone &fat and some spices..

Yoooooooo lets go its from my part of the woods! These guys who do these massive batch meals are called Baburchi in Bengali, my language, the word generally translates to cook or chef. No recipes, just go by feel! Also theyre speaking tamil.

There are a bunch of channels like this. Grandpa Kitchen i think was the first and most prominent one, but sadly Grandpa passed away 4+ years ago. They had the same concept, but also always showed how they served the food to their village. It gave it a really wholesome spin to see the villagers and all the kids eating the food in the end. Besides that would love to see you react to more channels like this or outdoor cooking in general. The Channel Almazan Kitchen might also be interesting for you in that category. His outdoor cooking is like a therapy session :D

Just had biryani a few hours ago and am back hungry for more. This one is just one of their five, 100 million+ viewed videos and there's a lot more out there which have tens of millions of views and it just varies from tons to tons. A lot more to check out and these guys are awesome. They cater to a old age home when making big batches of food like this. Thank you chef for making me more hungry and for this awesome video too😁

Cooking outside over an open fire is an amazing experience! I did a 'Thanksgiving' lunch/dinner in the rain 6 years ago, the added smokiness from the wet wood was incredible! Hard to keep the fire going, but fun!

Here in India when we buy meat the butchering is done right in front of us in the shop so you know the meat is fresh except in posh areas in metro cities. I have watched chicken and goat being cut countless time since childhood. Its very normal for us.

Village cooking channel is Tamil language channel. Tamil is spoken in the Indian State of Tamilnadu. The Tamil language is one of the earliest languages spoken in India. They say the language was born even before the rock and sand was created. It is very beautiful language. I live in Chennai which is capital city of Tamilnadu. Please do visit India. Each state is different in India and we take pride in our cooking. But am not sure which district Village cooking channel is filmed in Tamilnadu.

That green curry is called Dhalchaa. We usually use the hard bones from the goat and turn them into a none spicy curry. Pairs best with any Briyani!!

Chef since you raised your question it's not a sauce or chutney. It's a mutton gravy prepared with coconut and cashew. Also lastly he said "initially semi cooked briyani then Deep cooked by stuffing in meat., Brought the mutton and rice, separated and having it is delicious and best"

I don't think it's a broth. The broth wouldn't turn green, it's some kind of mint yogurt chutney, which goes traditionally with biryani.

The green chutney you said is a gravy from lamb meat. That is seriously a saucy extract from meat merged with spices and gives even more flavour for the food. The gravy is mostly preferred with white rice.

It’s a type of curry. We have specific types of curry which are usually served with biriyani or some yogurt based salads. It’s neither a sauce nor a chutney. Eating on a banana leaves is a very authentic way of eating and we eat on them in every special occasions including weddings.

For steaming you don't need to measure the temps. It is not a presure cooker so the steam/water is 100 degrees. You need to keep it boiling
