One thing that I appreciate about your videos (both reaction videos and recipe) that you not only give proper respect and credit to the creator of the video but you also give so much more insight, knowledge and context to the video in a entertaining way which is rare in a time where reactors just basically re-upload other people's content with no addition of their own. As an American expat who currently lives in India (for the last 8 years) ... this video is almost spot-on. :) The only thing I would say is that all butter chicken dishes are chicken tikka ... but not all chicken tikka dishes are butter chicken. Tikka (at least to my understanding based on the local population here in Pune) simply means "small pieces" ... regardless of how you prepare them or whatever spices you add to them, etc. :) Regardless, great video, please do continue the fantastic work! :)

I remember the days when American Idol started out and they used to feature brilliant singers but also awful singers for comic relief, and that was a nightmare to sit through. I love Uncle Roger, love watching him roast bad dishes, especially when western cooks massacre Asian dishes, but I wouldn't want anyone to *repeat* that mistake.

I tried this a few times since you posted the original translation. IMO it's the best butter chicken recipe out there. Fellow westerners: try it. It's actually very simple. It is probably just a lot of ingredients you don't have, but it's worth it. Not a difficult recipe. For my western tastebuds, it was just a touch spicy, but not too bad. I added a touch more cream but that was it. Also, one time i did not strain the curry, because I am lazy and didn't want to wash another two dishes. It had a totally different texture (obviously) but it was seemingly less spicy (?) and I kind of preferred it. I'm curious what chefs from India would say about that.

(I don't know If it's Important but I am an Indian 🙋) If you like it that way then that's good also the straining process generally is optional in these blended Indian gravies... I personally like it as velvety smooth as possible... Butter chicken is a sweet tasting dish (Tomato Sugar and Cooked Onions) so I guess the smokey and spicy flavours are important to balance out the sweetness. Some restaurants serve it with sliced onions (do wash them once or twice to wash out some of the onion-ey flavours) for some freshness from all the fat in it...

I am not a chef but I like to cook and I am Indian.... When you boil whole spices the spiciness and a lot of aroma gets out into the sauce. So when you don't strain it, you just increase the volume but the amount of spices remains the same. It's totally ok not to strain, even I don't strain it when I make it. Think of it like 2 versions, one where the gravy is smooth like butter and one where the texture is rough, I like both.

The whole purpose of "sauteing" (tempering) the chili and coriander in butter is to make a flavor bomb, not just to accent them a bit. I don't know if you didn't catch that because he poured the whole contents over it instead of drizzling the mixture over the final product, but tempering is a crucial step in many Indian and Pakistani dishes especially in higher smoke point fat like oil or ghee. And no this is not spicy at all in case anyone hasnt tried it.

There's a regional dish in Bihar Province of India called the litti which is a small flour dumpling full of herbs and gram flour/chicken (non vegetarian varieties are a bit rarer) which are served with chokha, an aubergine mash that tastes very smoky. litti-chokha is hyperregional but very loved. and also Vada Pav, a fried potato mash between freshly baked bread and chillies and other condiments. These are street foods and very easy to make. Maybe you could try making them.

Just giving you a tip as an Indian every Indian dish made is prepared slowly because as you all know we add a variety of spices and we love flavours...in a average Indian household we make our dishes on low/medium heat , this enhances the taste ×100 ( not on working days but on weekends, special occasions and festivals)

Sambhar with idli might be my favorite food. Bengali shukta is also remarkable. Both very healthy dishes, and very delicious... and khadi pakora... and dahi vada... Can't forget those. So many good dishes in India that we rarely see in the United States restaurants.

"Deggi Mirch" is not supposed to be very hot. It is closer to paprika than cayenne pepper. It is used for its milder flavor and color.

Try buttermilk curry. It's called "kadi" in Maharashtra, at least as far as I know. It's the laziest one, but also tricky to work with. It's tangy, spicy (level of spiciness varies).

here in malaysia, there's a lot of India food here. I love Indian food...we have panee puri, roti puri( puri bread), roti canai( canai indian bread), banana leaf rice.. I usually eat roti canai for breakfast.I love it

So the degi mirchi is used just to add color in the dish . It itself does not have spicy flavour . On the other hand its normal mirci (red one ) which is used for spice purpose

This is something I make quite often at home, with a small change - I add around 10-12 cashews with the tomatoes at the beginning, substitute deggi mirch with kashmiri chilli powder, and kewra with rose water. The result is absolutely delicious!

2:32 hahaha... _degi mirch_ is the present-day substitute for Kashmir chilli/chile powder, which itself is used in Indian cooking more for the red color than its spiciness; it is much less hotter than regular Red Chilli Powder that is used in Indian cuisine

My mom recommend me Chef Brar last when, when I asked if she knew any recipes for Urad Dal (surprisingly never got to try it before, so cooked it on my own), and she searched a recipe for me (which was his). While what I cooked wasn't perfect, it still was really delicious and I miss it. Will probably make it soon once I get to visit the South Asian grocers soon and get that Urad. So yeah, would definitely recommend him for South Asian recipes!

I'd never leave the cashews! They give the dish a bit of nutty sweetness as well (and I never used honey/sugar for sweetness). I'll give it a try though

A common misconception about butter chicken (even amongst people of Indian origin) is that you have to have a gravy that's loaded with butter or cream whereas the bulk of the Makhni gravy is the onions and tomatoes and optional nuts the name is because of the smooth, luxurious texture rather than the actual contents.

Honestly, butter chicken is always at the low end of my priorities when ordering or making indian. I only ever really make it when others ask me to lol. Korma used to be my favourite type of curry, but now, I've expanded to many different dishes. Rogan Josh (Ranveer has a recipe for this and I think you'll friggin LOVE this one), Madras, Jalfrezi, all so much more nuanced and frankly, tasty. I never sleep on samosa or pakora, and if seekh kebab is on the menu, I'm destroying some of that too lol. Then you have the regional stuff, like Hakka cuisine. If you haven't heard of or tried Hakka style, it's basically chinese/indian fusion, and it's literally the best of both worlds. Hakka style Chilli or Manchurian chicken? To friggin die for.

Traditions aside, never heat honey, it converts the beneficial properties into more detrimental properties. Same goes with chilling honey. Basically, never change the temperature of honey. Eg. in this recipe situation, add the honey in after turning off the heat.

You should add a spoonful of ghee on the embers of apple chips, then you get a good smokiness to your dish and you can also add cinnamon powder over the ghee and the flavor is enhanced.

A NOTE OF CAUTION (pot selection): 2:21 Using seasoned cast iron instead of enameled cast iron for cooking a tomato-based dish is a big NONO. Tomatoes are acidic and can degrade or ruin a lovingly cultivated carbon patina, esp if a fair amount of simmering time is involved. For acidic dishs like this one, say yes to stainless steel, or enameled cast iron, and NO to aluminum or seasoned cast iron.

I am good with pretty much any Indian dish, could happily eat them every meal for the rest of my life, but favorite is probably chicken tikka masala or any non-seafood korma as long as it doesn't have whole raisins in it, saag paneer is also good doggone it, now I want Indian food

Congrats on 200k❤ My favourite Indian dish is samosas and those spicy potato balls (I think they’re called bonda) and most vegetarian starters. Along with that fluoro green sauce. Long ago when I was still eating meat once in a blue moon I tried butter chicken and vindaloo few times and the conclusion was I hate butter chicken, love vindaloo.

This is an interesting idea James. I like that. Could we sub the deggi mirch with kashmiri? Seems to be pretty much the same idea, isn't it? I could marinate some chicken as I do with other butter chicken. Say yogurt, garlic, lime, garam masala, cayene, cilantro, cumin and salt. Cook it and perhaps leave for a few hours or maybe not. It seems easy enough. Not that I have fenugreek leaves (I do have the spice itself) nor that fancy water but I can grab it. Where did you find the chips for smoking it?

Chef James I think you started on the wrong note by adding the onions and tomatoes to water, it has to start with being sauteed in some oil, then add water after the onions are translucent. I'd like to see you attempt the "Chicken Angaara". Looking forward to it.

James I already like you for doing this cooking properly. Along with the fact you respect the food as it is. Good job brother. If you ever plan to come over let me know. I really like samosas and the hottest curries; vindaloo, naga, and phall/pal. Unfortunately some places will do shortcuts and just make something extremely hot but with little regard to the flavour. But when a restaurant does it well, it's extremely hot but the flavours are there and make a lot of sense.

Just soak the cinnamon in water before cooking... it will help you blend it easily! Also i dont think apple wood can compensate the aroma from the coal 😅 but kudos to your try😊

There is a lamb curry that is super spicy 😅, even cold it was good but my eyes & nose ran like sieves with the constant dripping 😅, I don't recall the name of that dish, it was still enjoyable 😅

I very rarely cook Indian food even though I love their spices. Somehow I feel it's too much effort. Weirdly I don't shy away of other recipes that are also a lot of effort (I made mole from scratch). I think what intimidates me is the number spices (and toasting of them) used for the dishes.

If u go from North to South of India, u won't find much of Butter Chicken here.. It has little Sweet taste, which we don't like here much in South.. We can't mix Sweet and Spice 😀 Even I order Chettinadu Chicken Gravy for Naan coz I don't like the sweet taste of Butter Chicken (if I ever order Naan coz Dosa is the Heaven here 🥰). Sweets are only for Desserts 😃

Loved your video 😃I absolutely adore Ranveer Brars video but do keep in mind his cooking caters mostly to North Indian cooking style. One of my absolute favourites and lesser known dishes I love is stuffed mussels or kallumakaya nirachathu 😃it’s a specialty of my hometown and I could eat bucket loads of it
