Most of us are told in general what we can eat, but it seems most of us think we can just eat smaller amounts of what we used to eat only lower in carbs and sugar. The nutritional changes you recommend have the potential of not only adding years to our lives, but improving the quality of those years. I’m definitely not where I need to be, but I feel like I know where I am going and working my way there. Thanks so much. I am 9 months out from gastric sleeve surgery. You can substitute roasted garlic cloves for butter in baked potatoes. Simply roast a whole garlic bulb until soft. Mash with a folk with a little salt then add to baked potatoe. Sprinkle with paprika and a little dill or green onions.

Respectively-there is no commercially available GMO wheat grown in the US. You are talking about hybridization. The chart of wheat crosses, in your presentation is illustrating hybridization. GMO crops are typically developed to resist glyphosate (round up).
You still have some misplaced carbophobia, imo. White rice, pasta, white potatoes, and breads made with no added fat are not normally obesogenic. The misunderstanding that "carbs are fattening" comes from the fact that if you eat added fats _with_ the white rice (pasta, bread, popcorn, et cetera) as nearly everyone does, then the carbohydrate will facilitate the storage of the added fats. However, if the "bad/ugly" carbs are eaten free of added fats, then the body would have to convert it to fat via de novo lipogenesis, which is not something that's likely to happen, unless the person is consuming a massive amount of calories.
