Pecan White Chocolate & Cranberry Cookies
Ingredients
¼ cup (60 g) unsalted butter, at room temperature
½ cup (100 g) packed light brown sugar
2 large egg yolks
1 Tbsp (15 mL) honey
1 tsp (5 mL) vanilla extract
¾ cup (110 g) all-purpose flour
½ tsp (2.5 g) baking soda
½ tsp (1.5 g) ground cinnamon
½ tsp (1.5 g) ground ginger
¼ tsp (1 g) ground cloves
¼ tsp (1 g) salt
¾ cup (75 g) chopped, lightly toasted pecans
½ cup (80 g) white chocolate chips
½ cup (70 g) dried cranberries
Directions
1. Preheat the oven to 350 F (180 C). Grease a 9-inch (23 cm) fluted removable bottom tart pan.
2. Cream the butter and sugar by hand until smooth. Beat in the egg yolks, followed by the honey and vanilla. Sift the flour, baking soda, cinnamon, ginger, cloves and salt and stir this into the butter mixture. Stir in the pecans, chocolate chips and cranberries. Spoon this into the prepared pan and press down until level, dipping your hands in flour to keep them from sticking as you do so. Bake this for 14 to 16 minutes, until an even golden brown on top. Cool the pan on a rack completely before slicing into wedges.
Pecan White Chocolate Spread
1 ½ cups (150 g) toasted pecans
½ cup (100 g) packed dark brown sugar
½ cup (65 g) icing sugar
3 oz (90 g) white chocolate chopped
1 Tbsp (15 mL) vegetable oil
2 tsp (10 mL) fancy molasses
½ tsp (2.5 g) salt
½ tsp (1.5 g) ground cinnamon
1. Pulse the pecans with the brown sugar and icing sugar until the pecans are finely ground. Add the white chocolate, oil, molasses, salt and cinnamon and pulse until a smooth paste (it will be quite fluid). The spread can be refrigerated for 2 hours to set it, but can then be stored in a jar at room temperature for up to 2 months.
For a fun option (perfect for a toasted bagel), beat ½ cup (125 mL) of this spread into ½ cup (125 mL) of softened cream cheese.

This looks amazing! I wonder if the white chocolate used in the cookie dough and the spread are the same? Or are they different kinds of white chocolate? Also, can I substitute the molasses with honey? Thanks for this great recipe!

Definitely! Just remember to lightly roast them if they aren't already, and say away from salted almonds!

You can substitute the pecans for whatever nuts you prefer, just try to stay away from the salted kind!

Thank you for sharing, Anna. I made it and doubled the recipe...I followed the recipe to a "T" .... so I thought! When all the ingredients were already in a bowl, I noticed that the texture was "grainy" so I added 2 tbs cream cheese (while praying that my son won't detect it as he doesn't like cream cheese)...still too grainy for me, so I added 3 more tbs of cream cheese. By now, it's not grainy anymore but not as "smooth" as Anna's dough. Put the dough in the pie pan then put in the freezer for 10 minutes before baking. Went back to the video to make sure I've done everything accordingly. Lo and behold, I forgot the egg yolks! No wonder the dough was grainy! lol. It was 3 AM so I didn't try to make another batch. I was just praying that my son would eat it! At 12:10 PM my son came home for lunch, went straight to the cookie and said: "Eeeuuhhh...what is it? (while taking a bite cautiously) then said "did you put ginger in it? (He doesn't like ginger). Hesitant, I said "yes". He walked away while saying: "Why? You knew that I don't like ginger! I said; "Sorry, it's in the recipe but I didn't put much (I lied. I, myself love ginger so I used a lot of grated fresh ginger in it). Ten minutes later, he ate 1/3 of the pan and before he went back to school he ate 2/3 of the pan (double recipe). Yeaaaaaaahhh....it was a success, Anna! Thank you! I told my son that I'll make another one with some egg yolks and see which one he'd like better. He DID NOT like the spread at all! :(

Butter 1/2 cup light brown sugar 1 tablespoon honey 2 egg yolks 1 teaspoon vanilla essence Flour Baking soda Cinnamon powder Clove powder Chopped pecan peices White chocolate Cranberries Bake for about 14 to 16 minutes Pecans 1/2 cup dark brown sugar Icing sugar 3 ounces white chocolate chips 1/2 teaspoon cinnamon powder 2 tablespoons of molasses Cut it into wedges and see the crispiness.
