Does the lack of PID and one second preinfusion impact the overall quality and taste of the coffee? I make mostly milk based drinks so the steamer is a big win, but am concerned about the consistency and quality of the shots with the aforementioned features.

Emptying the boiler after eight hours does not sound like a necessary thing to do, you would only need to completely drain and clean it every few months as long as you filter your water and clean regularly! As for the OPV, it’s possible to find them on eBay. There are also some helpful coffee forum/chat rooms with better links to the mods. Thanks for the questions!

This machines refills and reheats very quickly so you could pull as many shots as you need so long as you budget in time to reheat, refill water, backflush machine, steam milk, etc. So in theory you could make about 10-30 drinks an hour but that's a very rough estimate as you'd need to factor in a lot of other variables. If you're going to be using it for a higher-volume cafe then you'd need to backflush almost every hour. You may want to consider a dual-boiler machine, maybe even a two group so you can pull more shots and backflush less often. If you have any more questions let us know!
I’ve owned the Oscar II . After three other espresso machines and more than 10 years of house espresso making I couldn’t make a single drinkable espresso with the Oscar my opinion is that the Oscar is the WORST ESPRESSO MACHINE ever!!! And if you are know how should an espresso extract you notice also in this video that the extraction is awful. You see clearly how the extraction should be like for example on the Appartamento.
It lacks a lot of features but that's not an accurate assessment of the machine. I've been using mine for more than a year daily. I've had to replace the heating element, group gasket and do a couple of deep cleanings of the shower screen. If you aren't diligent about your maintenance then it can be a very poor experience. The one second pre-infusion is the only gripe I have with the machine and you might have to tune the boiler pressure a little like I had to. I thought the machine was not very good because I was using a breville smart grinder pro, but I have a Varia VS3 now and it gets different but similar results to the shots I pull on the 2 group Wave mahl konig GBW at work
