This is such a fun idea! I’ve got a few pages coloured in this book and would love to see it completed next year! I think it would be fun and different to do a combination of ways of picking the pages - one can be selected by you, and then one (or two if it’s close) can be voted on in a poll and the remaining is randomised!
You can use water soluble media, you just need to use an alcohol marker to activate it. I use my inktense and watercolor pencils in mine all the time. Neocolor works as well. The color won't flow as much so make sure you take that into account when putting down on the paper initially. It won't bleed with one activation (although I always put a plastic sheet behind every page) and it won't warp. If you don't mind a bit of shadowng or bleed through you can do multiple layers. You can also use dry pencils over the top.
