Recipe Ingredients :
1. Cilantro Lime rice :
Water : 5 - 6 cups (To boil)
Rice - 1 cup (Appx 200 grams)
Oil - 1 Tbsp
Salt - 1 Tsp (as per taste)
Unsalted butter - 1 Tbsp
Cilantro / Coriander leaves - 2 Tbsp
Lime juice - 2 Tbsp
2. Mexican beans filler :
Olive oil - 2 Tsp
Chopped ginger - 1 inch
Oregano - 1/2 Tsp
Chilli flakes - 1/4 Tsp
Cooked red beans - 400 grams
Salt - 1/2 Tsp
Black pepper powder - 1/4 Tsp
Roasted cumin powder - 1/2 Tsp
Smoked paprika powder - 1 Tsp
Mexican Seasoning - 2 Tbsp
3. Chipotle sauce :
Roasted peppers - 100 grams
Peri peri chilli - 2 no’s (As per taste)
Smoky chipotle chilli flakes - 1/2 Tsp (As per taste)
Eggless mayonnaise - 100 grams
Salt - 1/4 Tsp
Water - 1/2 cup
4. Nachos sauce :
Butter - 2 Tbsp
Plain flour - 2 Tbsp
Smoked paprika - 1/2 Tsp
Warm milk - 300 ml
Red Leicester cheddar cheese - 120 grams
Salt - 1/4 Tsp
Cheese slice - 1 (optional)
5. Quesarito :
Large size tortillas - 8
Red Leicester cheddar cheese - as per requirement
Nachos cheese
Tortilla equal size
Grated Mozzarella cheese - 2 Tbsp
Cilantro lime rice - 2 Tbsp
Beans filler - 2 Tbsp
Lettuce leaves - 2 Tbsp
Sour cream - 2 Tsp
Chipotle sauce - 1 Tbsp
Nachos sauce - 1 Tbsp
