As for the lids, I learned the hard way that a low center of gravity is key. So be careful with heavy pullers on top, and have some of the lid's mass sink into the pot a bit lower than the rim (just like in Phill's diagram at 14:45 ). And I was wondering if the gurgling can be also the result of an excessively tight lid which constrains the intake of air, forcing it to happen via the spout itself, by gurgling.

Often there will be a small hole in the lid to allow unobstructed airflow and promote a smooth flow from the spout.
