In the northern hemisphere you will always see stars like the big dipper ( Ursa Major) and other constellations because they are above the plain of ecliptic and high above the sun. You do see different constellations from summer and winter if they are lower in the sky closer to the plain of ecliptic. If you set a camera pointing towards the north star (Polaris) and do a long exposure the north star will be a point of light but stars further away from the north appear as arcs of light showing the earth is turning. this is actually very simple. we do see completely different stars along the ecliptic in the middle of the night six months apart. the earth's orbit of the sun is an ellipse with 360 degrees, just like a circle. there are 365 days in a year. therefore the background of stars changes by roughly 1 degree every day or 180 degree over a 6 month period. you're referring to the northern constellations that are visible, because they are in the up direction in your little model and extremely far away. they are also rotated by 180 degrees after six months. you'll remember that the constellations of the zodiac are along the ecliptic, essentially in the same plane as the earth's orbit of the sun. those constellations also move by 1 degree per day and disappear into the daytime when they are opposite of the earth to the sun a month at a time. most satellites are smaller than compact cars. in a 4k photo of the entirety of the earth, a single pixel would be a mile across, so you would never expect to see something the size of a compact car in a full photo of earth. for images taken from the ISS, it is in low earth orbit and you'll find that there are relatively few satellites that are actually lower than the ISS. cell phones don't use satellites except for GPS location information. every cell mast has a GPS antenna that receives synchronization for the network. it keeps the cell masts in sync so they don't interfere with one another. you can get satellite phones. we commonly use them for extremely remote locations and out over the water. i've worked in satellite communications for more than 30 years. let me know if you have other questions and i will gladly explain them.
