Few foods take us to nostalgia land like Chicago pub style thin crust pizza. Flaky, crisp crust, mozz, greasy-crunchy pepperonis? Yes plz. You don't need to be sold on pizza though because as we've all learned by now, pizza is dope. In this video, Brian gets into the weeds on what makes his thin crust pizza recipe even better than the pies he grew up eating and how you can make it at home.

||INGREDIENTS||
FOR THE CRUST
330g or 2.5 C. AP FLOUR
4g or 1.5 tsp YEAST
6g or 1 tsp SALT
170g or 2/3c WATER
30g or about 2 TBPS BUTTER
(or for a gluten free version, we recommend following the America's Test Kitchen's "Best Gluten Free Pizza" dough recipe ow.ly/B54Z50BEHAC)
FOR THE SAUCE ( you may want to make a 2X if you like it saucy)
1 8OZ can TOMATO SAUCE
40g or 2.5 TBPS TOMATO PASTE
1/2g or strong pinch OREGANO dry
5g SALT
10g SUGAR
STIR OR PUREE TO COMBINE

Thank you for saying it! I always tell people there is a difference between Chicago style pizza and pizza from Chicago. Thin crust, tavern style is the best pizza ever. When transplants from Illinois say they miss good pizza THIS is the kind we are talking about. Don't get me wrong I enjoy a deep dish, but I only get it like 1-2 times a year.

I miss Chi food. I've been to a lot of places now, and Chicago has so many sig foods you can't get anywhere else. None of its good for me, but I miss it so much.

I wanted you to know, the sauce-less mushroom pizza has been a huge blessing to my wife. Among her dietary restrictions are tomato based products. We thought pizza was over. I can now make "The B-Boy" for me and the mushroom pizza for her. It would have never crossed my mind without you. Thank you!

There’s so many fantastic non tomato sauces though! Pesto, oil sauces (eg; olive oil with seasonings or butters), cream sauces…

@@alfieboy4022 agreed. One of my absolute favorites is a olive oil, butter, mushroom and Italian sausage topped pizza. My 5 yo granddaughter eats it like a college football player. Ravenous.

@@maxmustermann2676 good call. Also search for flammkuchen. It’s a German flatbread that’s very pizza-like. We had several varieties at the numerous Christmas markets in Germany. We ate it at least 4-5 times in a week.

I'm a thin crust pizza fan but I've never had Chicagoland style pizza before. I just finished making this pie and it's hands down the best homemade pizza I've ever had. The whole family raved about it. Outstanding work B, keep it up! Thanks for the recipe!

WORD! FINALLY a Chicago native setting the world straight on what's what in our pizza world! Deep dish has it's place here but it's not what regular native Chicagoland peoples eat on regularly. Thanks for this!

​@@williamward7801 As a Chicago native, I would say, in my opinion, the best Chicago deep dish (Giordano's) and the best Chicago thin crust are about equal to me in terms of how much I love them. They're very different but both so good. Thanks to God for pizza!

Hey Bri... I made this last night and my wife declared "THIS IS THE PIZZA" we are having from now on! Great crust texture, not complicated to make, really tasty and super easy uncooked sauce. Keep it coming cause you are doing a great service to RU-vid community by developing easy to follow steps and recipes that are within reach of the average home cook that come out great! Yousif Asfoor a few other viewers in the community have done it that way and had good results. I’d say heat the pan and then slid onto it. Does that make sense?

With this pizza, I was transported back to my high school years hanging out at Orlando's Pizza on Rt. 38 in Geneva, IL (western suburb of Chicago): Even to the point of eating WAY.TOO.MUCH. You don't get much simpler than this tomato sauce either. Just brilliant! Many thanks Brian.

The pepperoni looks good, but sweet Italian sausage is my jam. Spent summers on the south side with my grandparents where I ate Aurelio's PIzza, usually from Homewood. My grandfather also like Sanfratello's in Dyer, Indiana.

@@neilquinn I had my first job at Sanfrantello's as a hostess. Aurelio's is still my FAVORITE, but I live in Saint Louis and have to spend a lot of money to get it shipped here. Can't wait to try this recipe!!!

This works SO well. Followed the dough and sauce recipe and made two pies with a pizza steel - the whole family went nuts. Just absurdly good and easy.

Nicely done! I didn't read all of the comments, but I was partial to Barnabys growing up. I still think they have some of the best Chicago thin crust out there. I noticed that they would make and roll the dough through a machine- giving it a super consistent thickness. The intriguing next step was that they'd stage the flattened dough on racks for a few hours. I think this was just to save time, but I wonder if it helped the dough dry out slightly. I haven't tried that step yet, but I think they might be on to something. Nice work!!

Best pizza ever. Love the crispy, thin crust. The pepperoni/ pepperoncini and the white pizzas are our favorite. I made the overnight focaccia for an appetizer as well. Delicious!

I made your dough today and it’s the best thin crust dough I’ve ever made! I moved to northeast Pennsylvania from the Chicago burbs and Chicago pub style thin cracker crust doesn’t exist. This is perfect!

My now "go to" thin crust pizza dough recipe. Crispy and thin - simply delicious! Easy recipe. I left the dough sit at room temperature for longer than 2.5 hours; it did not affect the texture nor taste. The dough was easy to work with. Didn't need to stretch, just rolled out. Thank you, Brian!

BTW, Lake, Porter, and LaPorte counties in Indiana (i.e., the 3 Indiana counties bordering Lake Michigan) also consider themselves part of "Chicagoland" (although they also consider themselves part of "Michiana"), but everything you said about pizza in Chicagoland also holds true for NW Indiana. There's a place here in town (I'm in the dirty south) that makes this type of pizza, and I always thought it was a totally original recipe, but now I see that it actually is an existing style. I love it. The crust is amazing, the whole thing is just delicious.

I like your style and great sense of humor. I have tried a number of your recipes, and they turn out delicious. I like how you demonstrate exactly how you do things as you go along, leaving very little guessing. I think that is why everything turns out, probably no where near how your food tastes, really good. Dude, THANK you. I've been looking for a proper, crunchy, thin-crust pie and you nailed it. Don't even have a pizza stone and it still turned out baller. I ended up adding flour to the food processor because my dough wasn't as crumbly as yours (maybe from over mixing?), but that was an easy save.

I finally got around to making this (the crust at least) and it came out awesome. I chilled mine for a day before making it and the texture was on point. Highly recommend it with Italian sausage I made my own fresh.

Just made this last night, adding butter to the dough mix really put this over the top. This was the best tasting Chicago thin crust pizza I've made, and I've made several based on RU-vid videos. It tasted like it came from a neighborhood Chicago pizza place.

Reminds me of the pizza I used to get at Pizza Rustica in Wrigleyville. I lived on Grace just a couple blocks from the stadium and probably once a week I’d walk around the corner and pick up a pizza exactly like this masterpiece.

For those who are having doubts about this recipe. Don’t. I’ve seen them all on RU-vid and this is soo straightforward and works like a charm! Baked in my roccbox in under 5 mins. I deviated on the sauce though: I had left over raw neopolitan sauce from the previous day: hand crushed tomatoes, and the tomato juice from the can that I had kept aside. Recombined them in a pan with some garlic, sugar and salt and reduced it. It was phenomenal! This channel needs a lot more subs!

Just made the family 4 of these with different toppings and WOW! For a southern boy never been to Chicago this is one good pizza! Sauce is GREAT nothing like the sto bought poop. B Man is the MAN!

Brian, been loving your pizza content lately. We love the sheet pan pizza! In this video you used the term pepperoncini and banana pepper interchanged. I can’t do pepperoncini on pizza, they’re too bitter and belong on salads only. B-peps are my jam.

Thank you for that tip about mushrooms. It seems obvious to cook them beforehand to get rid of the moisture but somehow it never came to my mind.

Agree Italian sausage is the best. I was born and raised in Chicago and never had pepperoni on a pizza until we moved to the East coast.

Gotta say this dough recipe is the best I've found for tavern-style pies. I roll mine out thin and then stretch by hand to get them even thinner. Following the amounts as called for in the directions is actually enough for two pies with how thin I roll them out. Truly a spectacular recipe, thanks a million!

Not too thin. You'll end up with St Lous style pizza. Chicago thin crust is still doughy, but some places make it a bit crispy on the bottom and crust but still with an inner doughiness. I remember one place who burnt it a bit. I remember counting around almost 12 to 15 pizza joints in about a 2-mile sq radius when I was a kid, and they had some things different but still managed to fit the Chi-style. But St Louis has the real cracker-thin crusts. Oh. And I never heard it called pub or tavern style. Most people get them from a mom and pop business, and you can often get Italian beefs. An Italian beef and a thin-crust sausage is the way to go. My childhood.

I grew up in the U.P. and this is the pizza we ate. Riverside Pizzeria in Iron River and The Infield in Crystal Falls make some of the best you'll find anywhere.

Making this again right now. Lost count how many times my toddler and I have made this over the last year. The written version of this has officially made the “family recipe binder.” Usually have one for dinner, pop the other half of dough in the fridge, then make it for lunch the next day.
