How to prepare perfect homemade puff croissants yourself?
Homemade puff croissants:
Ingredients:
1 glass of warm milk (200 ml)
1 glass of warm water (200 ml)
1/2 cup of oil (100 ml)
1 teaspoon of sugar
1 bag of dry yeast
1 egg white
1 + 1/2 teaspoon of salt
4-5 glasses of flour (500-600g)
butter (100-150g)
For coating
1 egg yolk
1 tablespoon of water
Preparation:
Add 1 cup of warm milk, 1 cup of warm water, and then 1/2 cup of oil to the bowl. It is also necessary to add 1 teaspoon of sugar and one bag of dry yeast.
Mix the mixture, cover with a plate and leave it in a warm place to stand for 15 minutes. When the mixture has stood for the required time, add 1 egg white, 1.5 teaspoons of salt and 1 cup of flour.
Stir gently. After that, you need to add about 3 more glasses of flour and mix it all to combine well. If necessary, add more flour, but take care that the dough must be soft.
When you have combined everything nicely and have a soft dough, you need to leave it in a warm place for about 30-40 minutes to rise. When the dough has risen, knead it and then divide it with a knife
into 16 equal parts and form each of them into a ball and place them on a plate.
Take one ball and roll it out with a rolling pin, when you get a round shape of medium thickness, place it on a separate plate and then coat the rolled-out piece of dough with a layer of butter.
Repeat the process of stretching each ball, and after stretching, place each next one on top of the previous ones and coat with butter again. Note: the last stretched ball is not coated.
When you have stretched, coated, and arranged, the dough should be placed in the freezer for 40 minutes to cool.
After the dough has cooled, take the dough and roll it out. And then divide it into 16 equal "triangles". Roll up the croissants and arrange them in a baking tray. When all the croissants are rolled, you need them
to be coated before baking. To coat the croissants, you need one egg yolk mixed with a spoonful of water. Coat the croissants and then they are ready to bake.
Bake in the oven for about 10 minutes at a temperature of 200° and then reduce the temperature to 150° for the next 20 minutes. The croissants are baked and ready to serve.
