Awesome recipe ❤. May I please know the shelf life of these, do they need to be refrigerated or can be left at room temperature? Do we need to heat them before serving or can they be served cold too? Can these be served after a week of making them ?

2-3 days, store in refrigerator

Also can honey be used instead of sugar in the stuffing for a healthier alternative?

I do not recommend honey. It will make a mess in the filling and then the rolls will become difficult to seal. Please use sugar.

hmm we always made gujiya with khoya but some people use sooji, coconut etc so those can be used too.

Does the puff pastry texture get soggy once dipped in the sugar syrup?

It does not, in fact if it cools down and you want to heat it up, put it in air fryer or oven and it becomes quite flaky again. But if you are not sure, skip the dipping in sugar syrup step, they are still good without it
