Pumpkin Cheesecake and How To Avoid the Most Common Mistakes When Making It

Pumpkin Cheesecake (yield: 1 9-in round)
Cheesecake:
16 oz (454g) cream cheese, softened
1 c (213g) brown sugar
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp cloves
1 c (227g) pumpkin puree
3 eggs
2/3 c (151g) heavy cream
1. Mix cream cheese, brown sugar, and spices. Stop and scrape the bowl a few times to make sure the mixture is completely smooth.
2. Add the pumpkin and mix until smooth.
3. With the mixer running on low, add the eggs one at a time. Wait until each egg is incorporated before adding the next.
4. Pour in the heavy cream and mix until homogeneous.
Crust:
8.8 oz (250g) cookies
3 oz (85g) butter, melted
1. Grind cookies into a powder. Add melted butter and mix.
Assembly:
1. Press the crust into a 9-in round cake pan.
2. Place the cake pan in a roasting pan or any larger pan.
3. Fill the cake pan with the cheesecake mixture.
4. Add hot water to the roasting pan until it goes roughly 2/3 of the way up the cake pan.
5. Bake at 300F for 70-80 minutes or until the center wobbles just slightly.
6. Let cool overnight before removing from the pan.
Cream Cheese Icing:
8 oz (227g) cream cheese, softened
4 oz (113g) butter, softened
1 c (113g) powdered sugar, sifted
1 tsp vanilla
1. Mix cream cheese and butter until smooth.
2. Add the powdered sugar and vanilla and mix until combined.

I actually prefer mine overbaked. My mom made it like that all the time. It was really dense but still tasted sooooooo delicious. So my mom never realized she was over baking it

This is classic New York style cheesecake, but there is one called Basque cheesecake that sounds very similar to what your mom makes. It’s more “imperfect” so cracks can even be desired in it, and it’s not uncommon to see one’s with the edges burnt because they’re cooked high temp and quickly usually. Imo whether I want very dense cheesecake or lighter creamy cheesecake depends on the day, my mom once made one that was dense and only lightly sweetened and honestly I was tempted to have it with an actual meal instead of as dessert, it was so good

@@JacquelineUnderwood I make cheese cake with half mascarpone half cream cheese and it makes the texture dense but it feels less heavy somehow I think because the fat content is different, I prefer to do it that way it makes it so well. also cool it in a Dutch oven so it cools more slowly

Cheese cake is the only food I will eat in any of these three stages. It's either runny/ gooey, gooey/ firm, firm/ chewy. Cheesecake is great in any form, and I never waste it.

Underbaked cheesecake is best served lightly frozen. It's also a great way to use more delicate flavors like peach or pear, where the baking process in the just-right and over baked cakes would destroy those delicate flavors. Cheesecake is such a versatile thing, you can get very lost in that rabbit hole.

I think the water would seep into it...? Maybe that's why a spring form isn't used with this method. I'm just guessing in case someone tries a water bath cooking with a spring form. ✌🏼

Your daughter is awesome. I make a pumpkin pie cheesecake and use store brand Graham crackers as well and everyone always loves it and asks for more. My mother in law ate 75% of my cheesecake one year and never even apologized for eating it. I have to make 2 every year now one for my family and one for my husband's 😂

Biggest tip to baking anything in a water bath is to put the pan in the oven and add water then to avoid spilled water. 👍

You can also not mix your pumpkin into the cheese cake. Use about half the cheese cake mixture needed for a given pan and a similar amount of pumpkin pie filling. Cheese cake goes into the bottom and slowly poor the pumpkin pie mix on top, your goal is to have two distinct layers; now bake as normal. Also a good ginger snap cookie makes for an excellent crust.

You can also avoid cracking your cheesecake by turning the oven off when its done and letting it residual bake in the oven until it’s room temp and set

You can also use a springform pan and a low and slow baking method if you don't wanna deal with the water. Low and slow also lessens the risk of overcooking.

Noticed many others saying it too but I actually enjoy the dense texture of an overbaked cheesecake more than a perfectly baked one. I couldn't tell you why, but it's a much nicer texture to eat. However it's always good to be armed with more knowledge!

I made this for Thanksgiving supper, and everyone said it was the best pumpkin dessert they'd ever had. I used ginger snaps rather than the biscoff cookies for the crust, but otherwise followed the instructions exactly. This was the best cheesecake I've ever made. Will definitely be making again.

I kid you not (minus the pumpkin), this style cheesecake is LEAGUES BETTER than New York Style. I like creamy cheesecake over cakey, porous cheesecake. Edit: What style would this type of cheesecake be considered? It damn sure isn’t NY. I live near Chicago, and never had Chicago style. Never heard of Philly style until I searched the types.

Okay so have some questions: 1) Should we prebake the crust? If so should we use pie weights? Or is it best to bake the crust and filling together? 2) When we remove the cheesecake from the oven DO WE KEEP IT IN THE HOT WATER BATH OR REMOVE IT? I'm fine with either but it seeems like it would make a difference if it was still in the water vs on the counter. 3) Your recipe says cool overnight. Is it better to leave it on the counter? Or can it go in the fridge? How soon is too soon to go in the fridge? Thanks. I really hope you see this. Your videos are great.
