RECIPE:
Pumpkin Earthquake Cake
Ingredients:
Cake-
1 box Spice cake mix
3 eggs
1 cup pumpkin puree (not pie filling)
3/4 cup water
1/2 cup vegetable oil
1/3 cup sugar
2 tsp pumpkin pie spice (optional)
Cream Cheese Filling-
8 oz block cream cheese
1/2 cup butter, melted
2 cups powdered sugar
1/2 cup semi-sweet chocolate chips
Directions:
1.) Preheat oven to 350- degrees. Grease 13x9" pan.
2.) In a mixing bowl, with an electric hand mixer combine the cake mix, pumpkin puree, eggs, water, oil, sugar, and spice. Beat on medium-high for 2 minutes. Pour into the pan and spread.
3.) In a mixing bowl, beat the cream cheese and melted butter until smooth. Add the powdered sugar and mix.
4.) Place spoonfuls of the cream cheese mixture on top of the batter. Use a knife to swirl the cream cheese mixture into the batter.
5.) Sprinkle the chocolate chip over the top.
6.) Bake for 35-45 minutes or until a toothpick comes out clean. Cool completely before cutting the cake. **TIP- Allow it to cool for 10-15 minutes and then transfer uncovered to the fridge to cool completely.
**I omitted the sugar and pumpkin pie spice and the recipe was still very good!
