PUMPKIN EMPANADAS: How to Make Sweet, Delicious Pumpkin Empanadas from Scratch

These Homemade Pumpkin Empanadas are sweet and delicious, and they're perfect with a hot cup of coffee or a cold glass of milk. If you've never heard of an "empanada" before, they're basically the Spanish equivalent for the pastry known as a "turnover." Whatever you choose to call them, you'll want to make this easy recipe. The video shows you exactly How to Make Pumpkin Empanadas, but you can also read on for the ingredients and instructions.
Pumpkin Empanadas
For the dough:
3 cups all-purpose flour
1/3 cup sugar
1/2 tsp. salt
1/4 tsp. baking powder
1 cup chilled unsalted butter or shortening
1 cup warm water
For the filling:
2 cups pumpkin puree
1/2 cup sugar
1/4 tsp. salt
1 Tbsp. pumpkin spice
1/2 tsp. vanilla extract
For the egg wash:
whisk together 1 egg & 1 Tbsp. milk or water
First make the dough. Put all the dry ingredients into a large mixing bowl and mix. Add the chilled butter and use a pastry blender or fork to incorporate it into the flour mixture. Begin adding the water a little at a time. (You may not need it all.) Knead with hands. When dough sticks together nicely, form into a ball, cover with plastic wrap, and chill in refrigerator a minimum of 30 minutes.
For the filling, mix together pumpkin puree, sugar, salt, pumpkin spice, and vanilla extract in large mixing bowl. Mix until well blended and set aside..
When ready to make the empanadas, lightly flour a flat surface. Take dough and form it into balls a little larger than a golf ball. Roll out. Place 2 Tbsp. of pumpkin mixture just slightly off center of your rolled out dough. Use a knife to create heat vents on the other side of the dough. Fold over, and trim edges with knife to form a half circle. Use fork tip to seal the ends, and carefully place on a greased baking sheet. Continue making empanadas one at a time. (Leftover dough can be re-rolled.) When you have a full tray, lightly brush tops of empanadas with egg wash and bake at 350º for 25 minutes, or until golden brown. Let cool before eating.
*This recipe makes 12-15 empanadas
Should you want to make your own pumpkin puree from a fresh pumpkin, just break open or cut your pumpkin in half, remove stem, seeds, and string/pulp. Lightly drizzle olive oil over pumpkin and place onto baking sheet, shell side up. Cover with foil and bake at 400º for 30-40 minutes (depending on size), or until flesh of pumpkin is soft. Take out of oven, let cool, and with a large spoon, remove pumpkin flesh, placing it into a food processor or blender. Blend until smooth. Consistency will be more runny than canned pumpkin puree, so you'll need to drain the excess liquid. A good way to do this is with cheese cloth. Line a large sieve with at least two layers of cheese cloth, pour in pumpkin puree, and let drain into a larger bowl or sink. And that's it! Pumpkin puree is so much better when it's fresh!

Our neighbor gifted us a pumpkin for Halloween so I decided to make Empanadas for Christmas. My partner devoured most of them and asked for more. Getting ready to make a second batch for New Year. Ok, update: I did make the empanadas using your recipe. And they turned out delicious 😋. Started using my blender to soften puree but it was taking too long so I went the old fashioned way and used my bean masher instead. It worked like a charm. Other than that everything else worked out smoothly. Thank you once again for your amazing recipe.

I also had lots of leftover pumpkin from the harvest season, so I tried this recipe yesterday for a school function and I received so many compliments! I'm looking forward to trying out your recipe for the Pumpkin Empanadas , They look simple to make watching your video.. I was raised on a ranch where my parents grew Pumpkins! My mother was always making them and I was never around to watch how she made them, I was either in school or at a job. But I'm excited to try your recipe.. I probably will use the canned pumpkin. It happened when I made the secong batch too! I didn't make them small, and they weren't under filled. But it meant everyone at work got one for the potluck, and there was enough for people who came asking to take extras home. And, I brought the second batch to my patents, my mom loves bakeing and couldn't stop talking about how good they are! I used some extra dough to make a few more with left over turkey, cheese, and taco seasoning as the filling, and still perfect. Love this recipe, shared the video with coworkers

Can the pumpkin turnovers be deep fried instead. Mother would deep fry hers-same as mincemeat empanadas, but I never took note of how she prepared the filling for deep fried pumpkin empanadas.

I've never seen that done. Would you have to cut it up in smaller pieces? Or how does that work on a stovetop? I'll have to try it sometime.

@@marcyinspired1442 I have a vegetable steamer and yes, I cut it into small enough pieces to fit. I leave it on for about 45 minutes, let it cool and the pumpkins slides right off without any burning, very succulent as well.

I would say you can refrigerate and store them for about 5 days. But mine never last that long, so I'm erring on the side of caution.

Well I made your recipe but mine didn't look as good as your but again this is my first time doing them my edges were a little to brown an they felt hard must be from the extra flour that I sprinkle on the board but the filling was good I also used a real pumpkin lest over from Halloween cooking on a electric stove an I just don't like them my favorite is cooking with gas 👋 Aloha

I hope you make them again because it always takes a little practice. And, of course, ovens vary, so maybe you can take them out a little sooner. I know what you mean about cooking on an electric stove versus a gas one. I learned to cook on a gas stove and didn't realize how great it was until now that I have an electric range. But we do what we can, right? Also, happy to hear you cooked your Halloween pumpkin. I always hate when people throw away perfectly good pumpkins when they're done decorating with them. I'm sorry you feel I go too fast, but I do put all the ingredients and measurements in the description box beneath each video. Every one of my recipes is written out for you so you don't have to go through the trouble of writing it yourself. If you look to the right of the title, you should see a little arrow pointing down. It looks like the letter "v" Click that and you should be able to see the written recipe. Hope this helps.
